Lamb Curry (Rogan Josh)

1,5kg lamb shoulder or leg, cut into 2cm cubes
vegetable oil
10 whole cardamom pods
15ml mustard seeds
2 bay leaves
6 whole cloves
10 black peppercorns
1 stick cinnamon
2 onions, finely chopped
8 cloves of garlic, minced
5ml ground coriander
10ml ground cumin
20ml paprika
15ml ground ginger
5ml crushed dried chillies
5ml salt
2 red chillies, chopped
120ml yoghurt
2,5ml garam masala

Place a heavy-bottom saucepan on a medium-high heat and cover the base with vegetable oil.
Brown the meat in batches and set aside in a bowl.
Add the cardamom, bay leaves, cloves, peppercorns and cinnamon and stir the mixture for about 1 minute.
Add the onion and fry for about 5 minutes.
Add the garlic and fry for another minute.
Now add the coriander, cumin, paprika, crushed chillies, salt and fresh chillies and stir-fry for another 30 seconds or so.
Add the meat and stir through to cover with the spices.
Add a spoonful of yoghurt and stir-fry for 30 seconds. Add the remaining yoghurt in the same way, so that the sauce does not split.
Pour in 375ml of water and bring the curry to a boil.
Turn the heat down to a slow simmer and cover the saucepan with a lid. Cook for 1 hour or until the lamb is tender, stirring frequently.
Remove the lid and cook the curry for another 30 minutes, stirring and waiting for the sauce to become beautifully thick.
Sprinkle over the garam masala, mix through and serve with fragrant rice.

Clam and Porcini Spaghetti

Clam and Porcini Spaghetti

300g dried spaghetti
1kg clams, washed
60ml white wine
45ml olive oil
45ml butter
250g porcini mushrooms, sliced
1 onion, finely chopped
4 cloves of garlic, minced
10ml dried oregano
2 x 400g tins chopped tomatoes
a large handful of parsley, chopped

Bring 5 litres of water to the boil in a large saucepan with 30ml (8 teaspoons) salt.
Add the spaghetti to the pot of boiling water and cook for 9 minutes.
Heat another large saucepan over a high heat.
Add the clams and the wine, cover with a lid and cook over a high heat until the clams have opened. This should not take longer than 8-10 minutes. Discard any clams that stay closed.
Drain the clams and set aside.
Place a large frying pan over medium-high heat and add the olive oil and butter to it.
Add the sliced porcini and cook for 3 minutes, stirring occasionally.
Add the onion, garlic and oregano and cook for another 3 minutes or so.
Now add the tomatoes as well as the clams and simmer gently for 5 minutes.
Drain the cooked spaghetti and add it to the sauce.
Sprinkle the parsley over and stir through.
Serve immediately.

Chicken Gyros and Flatbread

9 chicken breasts, skin removed
Marinade:
125ml olive oil
juice of one lemon
5ml salt
1 clove of garlic, minced
15ml oregano leaves, chopped

Slice the chicken breasts into strips and place them in a mixing bowl.
Add the olive oil, lemon juice, salt, garlic and oregano and mix together.
Cover the bowl with plastic wrap and place in the refrigerator for an hour.
Heat a cast iron pan and cook the strips for about 6 minutes, turning occasionally.

Yoghurt Flatbreads: (makes 6)
500ml self-raising flour
2,5ml salt
435ml yoghurt

Mix all the ingredients together to form a sticky dough. Add more flour if the dough is too sticky to handle.
Divide into 6 equal portions.
Flour a work surface and roll each portion to a 20cm diameter circle.
Heat a cast iron pan until very hot.
Add one flatbread to the dry pan and cook for a minute. Flip it around and cook for another minute or so. Repeat with the rest of the flatbreads.

Serve the chicken gyros on the flatbread with Greek Salad and Tsatziki sauce.

Greek Meatballs in Tomato Sauce/Soutzoukakia

Greek Meatballs in Tomato Sauce/Soutzoukakia

500g minced pork
500g minced beef
100g panko breadcrumbs
3 cloves of garlic, minced
1 onion, chopped
1 bunch of parsley, chopped
15ml ground cinnamon
5ml ground cumin
10ml salt
1 egg, beaten
150ml olive oil

Tomato Sauce:
45ml olive oil
1 onion, chopped
3 cloves garlic, minced
1 x 400g tin tomato purée
500ml water
4 sprigs of thyme, leaves stripped
1 bay leaf
20ml sugar
1,2ml ground cumin
1,2ml smoked paprika
5ml salt

Add all the ingredients for the meatballs to a mixing bowl and mix it through with your hands.
Now shape the mixture into 30-40 fat sausages and place on a baking sheet. Cover with plastic wrap and refrigerate for an hour.

For the Tomato Sauce:
Add the olive oil to a saucepan set over medium-high heat.
Add the onion and garlic and fry until soft and translucent.
Add the tomato purée and stir-fry for 1 minute.
Add the water, thyme leaves, bay leaf, sugar, cumin and paprika and simmer until the sauce has thickened.
Remove the bay leaf and blitz the sauce with a hand blender until smooth. Set aside.

Preheat your oven to 220℃ and cover the bottom of an oven tray with a thin layer of oil.
Transfer the meatballs to this tray and bake in the preheated oven for 12 minutes.
Now put the tomato sauce back on the heat and add the meatballs to it. Simmer for 5 minutes.
Serve with basmati rice as a main or in the sauce as a Meze.

30ml sunflower oil
30ml butter (or extra oil for vegan)
1 onion, chopped
10ml ground ginger
1 stick cinnamon
5ml ground turmeric
5ml ground coriander
5ml ground cumin
5ml medium-hot curry powder
5ml dried chilli flakes
2 cloves garlic, minced
15ml sugar
2 x 400ml cans coconut cream
250ml cashew nuts, finely chopped
400g butternut, cut into 2cm cubes
1 x 400g can chickpeas, drained
200g baby spinach, roughly chopped
250ml frozen peas
fresh coriander to serve

Place a large saucepan over medium heat and add the oil and butter.
Add the onion and stir-fry it until translucent.
Add the ginger, cinnamon stick, turmeric, coriander, cumin, curry powder and chilli flakes and gently cook the spices for 2 minutes while stirring.
Now add the sugar, coconut cream and cashews. Bring the sauce to a simmer and then take it from the heat.
Remove the cinnamon stick and blitz the sauce with a hand blender, until smooth.
Place the saucepan back on medium heat and add the butternut and chickpeas. Cook for about 20 minutes or until the butternut is tender but do take care that the sauce doesn’t burn.
Stir in the chopped spinach and peas and stir through.
Adjust the seasoning according to taste.
Garnish the curry with fresh coriander and serve it with jasmine rice.

Aubergine and Halloumi Vegetable Bake

4 aubergines
1 onion, chopped
8 celery sticks, chopped
2 cloves of garlic, minced
2 x 400g tins of chopped tomato
600-800g halloumi cheese
250ml olives, pitted
a bunch of thyme
a bunch of basil leaves

Preheat your oven to 190℃ and grease a 18cm x 28cm baking dish.
Cut the aubergine lengthwise into 3mm thick slices.
Pour some vegetable oil into a saucepan set over medium-high heat and fry the aubergine on both side, until golden.
Season with salt and pepper and set aside.
Add the onion, celery and garlic to the same saucepan and cook for 3 minutes.
Add the tomato and cook the sauce for 6 minutes, stirring occasionally.
Season with salt and pepper and set aside.
Cut the halloumi into sticks that are more or less 8cm x 1,5cm. You need the same amount of cheese sticks and aubergine slices.
Place a cheese stick on an aubergine slice, roll it up like a pancake and place in the prepared baking dish.
Pour the tomato sauce over the aubergine rolls and scatter the olives and thyme leaves over.
Bake in the oven for 30 minutes.
Scatter the basil leaves over the baked dish and serve warm or at room temperature.

Greek Calamari Pita

Greek Calamari Pita

These calamari filled pita breads are the perfect casual weekend food for entertaining friends and family!! Serve them with a crisp, cold chardonnay and kick back Greek style!!

Lemon-Yoghurt Sauce:
125ml yoghurt
1 clove garlic, minced
5ml dijon mustard
45ml lemon juice
a handful of basil leaves, torn

1 kg calamari rings, washed and dried
45ml sunflower oil
1 lemon
salt and pepper

about 2 cos lettuce, shredded

For the Sauce:
Add all the ingredients to a small bowl and mix well.
Cover with plastic wrap and set aside to infuse at room temperature.

Place a heavy-bottom pan over high heat and wait 2-3 minutes for the pan to get hot.
Turn the heat down slightly, more high than medium-high, add the oil to the pan and then the calamari rings.
Stir the calamari around for 2 minutes, NO MORE!, and immediately remove the pan from the heat.
Squeeze the lemon onto the calamari while it is still sizzling and season generously with salt and pepper.

Hold the pita bread upright (on the seam) and make an incision about a third of its circumference.
Lightly push two fingers in and wiggle them around to separate and open the inside of the bread, so that you have a large pocket.
Scoop a spoonful of the lemon sauce into the cavity and smear it around with the back of the spoon.
Place a thin layer of the shredded lettuce on the bottom of the pocket, then a layer of calamari and then a layer of the sauce.
Push all of this down with the back of the spoon so that you will have enough space for a repeat of layers.

Serve the calamari pitas with the leftover sauce on the side.


Vetkoek – Magwinya

Vetkoek – Magwinya

This is a traditional South African food that is popular as a quick meal and often eaten as is, filled with minced meat or with cheese and syrup. Vetkoek literally means “fat cakes” as it is basically a deep-fried bread. Magwinya is simply shaped differently, smaller than tennis balls and often found in Townships or sold as a on-the-go breakfast at taxi ranks.

10g dried yeast
900g cake flour
10ml salt
10ml sugar
vegetable oil for frying

Pour 250ml of warm water (tepid) into a mixing bowl and sprinkle the yeast on top. Stir to dissolve the yeast and set aside.
Add the flour, salt and sugar to the bowl of a stand mixer fitted with the dough hook.
Run the mixer on low speed and add the yeast mixture.
Now add some more lukewarm water (about 400ml) until the mixture comes together in a soft dough.
Knead on medium speed for 6 minutes.
Transfer the dough to an oiled mixing bowl, cover with a tea towel and set aside for 90 minutes.
Knock back the dough by kneading it by hand for 1 minute.
Pour about 2 litres of vegetable oil into a saucepan over medium-high heat.
If you are making Magwinya, pinch off some dough and shape it into a ball, about the size of a golf ball.
If you are making vetkoek, pinch off twice the amount of dough, roll into a ball and then press it flat between your hands.
Place the shaped dough on an oiled tray until you have shaped all the dough and the oil is warm.
Test the oil with a small piece of dough: if the dough starts bubbling and rises when dropped into the oil, it is hot enough.
Deep-fry the magwinya/vetkoek in the oil, turning them often for about 3 minutes or until they are a deep golden brown.
Scoop out and drain on kitchen paper.
Serve warm with mince/ragou or grated cheddar cheese and golden syrup.
