Lemon Dressing

This is one of the best salad dressing you will ever make AND you can keep it in your refrigerator!! Delicious when drizzled onto seafood!

62ml lemon juice
1 clove garlic, minced
5ml Dijon mustard
1,2ml salt
a pinch of ground black pepper
7,5ml honey
62ml olive oil
5ml thyme leaves, chopped

Add the lemon juice, garlic, mustard, salt, a pinch of black pepper and honey to a small bowl and whisk together.
Drizzle in the oil while whisking. Keep going until all the oil is incorporated and the mixture has emulsified.
Add the thyme leaves and stir through.

Store left-over dressing in a glass jar, in the refrigerator.

Vetkoek – Magwinya

Vetkoek – Magwinya

This is a traditional South African food that is popular as a quick meal and often eaten as is, filled with minced meat or with cheese and syrup. Vetkoek literally means “fat cakes” as it is basically a deep-fried bread. Magwinya is simply shaped differently, smaller than tennis balls and often found in Townships or sold as a on-the-go breakfast at taxi ranks.

10g dried yeast
900g cake flour
10ml salt
10ml sugar
vegetable oil for frying

Pour 250ml of warm water (tepid) into a mixing bowl and sprinkle the yeast on top. Stir to dissolve the yeast and set aside.
Add the flour, salt and sugar to the bowl of a stand mixer fitted with the dough hook.
Run the mixer on low speed and add the yeast mixture.
Now add some more lukewarm water (about 400ml) until the mixture comes together in a soft dough.
Knead on medium speed for 6 minutes.
Transfer the dough to an oiled mixing bowl, cover with a tea towel and set aside for 90 minutes.
Knock back the dough by kneading it by hand for 1 minute.
Pour about 2 litres of vegetable oil into a saucepan over medium-high heat.
If you are making Magwinya, pinch off some dough and shape it into a ball, about the size of a golf ball.
If you are making vetkoek, pinch off twice the amount of dough, roll into a ball and then press it flat between your hands.
Place the shaped dough on an oiled tray until you have shaped all the dough and the oil is warm.
Test the oil with a small piece of dough: if the dough starts bubbling and rises when dropped into the oil, it is hot enough.
Deep-fry the magwinya/vetkoek in the oil, turning them often for about 3 minutes or until they are a deep golden brown.
Scoop out and drain on kitchen paper.
Serve warm with mince/ragou or grated cheddar cheese and golden syrup.

Pearl Barley Salad

Pearl Barley Salad

375ml uncooked pearl barley
45ml sherry vinegar
2,5ml dijon mustard
2,5ml salt
30ml olive oil
50g blue cheese, crumbled
50 – 100g baby spinach
half a red onion, sliced
80ml pecan nuts

Cook the pearl barley according to the packet instructions – usually it is 1:3 (pearl barley : water). Allow to cool completely.
Add the vinegar, mustard, salt and olive oil to a cup and whisk everything together. Set aside.
Add the cooked and cooled pearl barley, baby spinach, blue cheese and red onion to a large bowl and mix together.
Drizzle the dressing over the salad and give it another quick mix.
Spoon the salad into a serving bowl and sprinkle with the pecan nuts before serving.

Sweet Potato Cakes

Sweet Potato Cakes

750g cooked and mashed sweet potato (about 4 medium sweet potatoes)
125ml self-raising flour
1 X 375ml can of Corn kernels, drained (you may substitute with cooked corn)
125ml pumpkin seeds
1 egg
2,5ml salt
2,5ml cinnamon
63ml brown sugar
vegetable oil to fry

Add all the ingredients to a large mixing bowl and mix through.
Place a heavy bottom pan onto medium-high heat and cover the bottom with vegetable oil to heat up.
Scoop a tablespoonful of the mixture into the pan and fry for 2-3 minutes before flipping and frying the other side for another 2-3 minutes. Do not overfill your pan as you want the sweet potato to caramelise and fry to a golden, crisp outside. Keep going until all the mixture is used.
Serve the cakes with a dollop of yoghurt and honey.

Roasted Sweet Pepper Salad

Roasted Sweet Pepper Salad

450g sweet peppers/bell peppers
30ml + 15ml olive oil
30ml white wine vinegar
1 clove of garlic, minced
12 basil leaves, chopped
2 sprigs of thyme
5ml sugar
2,5ml salt
45ml pine nuts, toasted
125ml crumbed feta cheese
125ml olives, pitted

Turn your oven on the grill setting and line a baking sheet with aluminium foil.
Drizzle the 15ml olive oil on the peppers and spread evenly over each pepper with your hands. Place the peppers on the lined baking sheet and grill for about 15 minutes, until their skins are black. DO NOT take the peppers out too soon….they can not be too blackened!
Immediately place the charred peppers in a mixing bowl and cover the bowl tightly with plastic wrap. Set aside until the peppers are cool enough to handle.
Break open the peppers, remove the core and seeds and pull the skin from each. It is easiest to use your hands to scrape the seeds out and it is quite all right for the peppers to tear into strips!
Add the peppers, oil, vinegar, garlic, basil, thyme, sugar and salt to a mixing bowl and refrigerate for one hour.
Arrange the marinated peppers on a serving plate and top with pine nuts, feta and olives.

Goats Cheese Tart

Goats Cheese Tart

This is the perfect food as a light starter or simply as a canapé served with drinks on the patio. It can also double up as a light lunch when served with a salad.

2 large pears
30ml butter
30ml honey
1 lemon
500g ready-made pastry
200g goats cheese
a handful of pecan nuts
a handful of thyme leaves
egg-wash: 1 egg + 15ml milk

Preheat your oven to 200℃ and line a baking sheet with baking paper.
Peel and core the pears and cut them into thin wedges lengthwise.
Place in a bowl and squeeze the lemon juice over. Mix up the slices with your hands so that the pear is covered with lemon juice.
Add the butter and honey to a large frying pan over medium-high heat.
Add the pear slices and any lemon juice from the bowl and cook for 2-3 minutes a side, until the pear is caramelised.
Remove the pear slices but reserve the honey caramel in the pan.
Roll the pastry to a 28cm X 38cm rectangle and score a 2cm border all around the edges. Place the pastry on the lined baking sheet.
Arrange the pear slices over the pastry within the border.
Now break up the cheese and arrange it randomly between the pear.
Scatter the pecan nuts and the thyme leaves over the pear and goats cheese.
Drizzle the leftover caramel from the pan over the tart.
Whisk the egg and milk together and brush the pastry border with it.
Bake the tart for 20 minutes until the pastry is beautifully golden.
Serve slightly warm.

Quinoa Salad

Quinoa is an ancient grain that is a complete protein and has a deliciously nutty flavour. This salad offers all the nutrients you need for a meal on its own or as a side dish to whatever else you are cooking.

45ml olive oil
30ml lemon juice

375ml quinoa, cooked according to the packet instructions
250ml tightly packed sun-dried tomatoes, chopped
half a red onion, finely chopped
125ml feta cheese, crumbed
1 apple, chopped into small cubes
a small bunch of chives or any other soft, fresh herbs, chopped

Whisk the olive oil and lemon juice together and set aside.
Add all the other ingredients to a bowl and mix through.
Drizzle the olive oil mixture over the salad and serve.

Broken Glass Slices

An old classic for jelly lovers and perfect to enjoy at a pool party!

4 x 85g packets powdered jelly, 4 different colours/flavours
225g digestive biscuits
125g butter, melted
125ml boiling water
20ml powdered gelatine
500g cream cheese
200ml condensed milk

Dissolve each colour jelly in 200ml boiling water and pour into individual/separate containers. (Lunch boxes work well). Set in the refrigerator for about 4 hours.
Cut the jelly into cubes and set aside.
Spray a 23cm x 23cm x 5cm baking tin/container with cooking spray.
Break up the biscuits and place it in the bowl of a food processor. Blitz until it resembles fine sand.
Melt the butter and add it to the biscuits with the engine running.
Transfer to the prepared baking tin and press firmly into the tin base in an even layer. Chill in the refrigerator.
Pour the boiling water in a mixing bowl and add the gelatine. Stir until the gelatine has completely dissolved and set aside to cool.
Add the cream cheese to the bowl of a stand mixer fitted with the paddle attachment and beat on high speed until smooth.
Scrape down, add the condensed milk and mix for a minute or so.
Add the cooled gelatine mixture and blend well.
Now take the bowl from the mixer and add the jelly cubes. Gently fold everything together.
Scrape the mixture over the biscuit base and press it into the corner of the baking tin. Flatten the surface by gently pressing down on the mixture with a spatula.
Cover the tin with plastic wrap and refrigerate overnight.
Slice the tart with a clean sharp knife and serve.

Flower Jellies

Flower Jellies

These pretty flower jellies can be served as a light dessert or as a palate cleanser. The wine may be replaced with grape or any other clear juice.

6 eggs
edible flowers
10ml powdered gelatine
45ml cold water
45ml sugar
150ml very hot water
75ml white wine or clear fruit juice

Poke a hole in the bottom of the eggs and pour out the insides. Thoroughly wash the inside of the shells and wipe dry.
Push the edible flowers inside the empty shells.
Pour 45ml water into a bowl and sprinkle the gelatine on top. Set aside to bloom for 5 minutes.
Add the sugar to the gelatine and pour in the hot water. Stir the mixture until the sugar and gelatine has dissolved completely.
Set aside to cool for a few minutes and then add the white wine. Mix well and allow to cool to room temperature.
Pour the gelatine mixture into the egg shells and refrigerate until firm. (about 6 hours)
Peel the egg shell away and serve the flower jellies.

Savoury Curry Biscuits

Savoury Curry Biscuits

Yes, I know it is unusual but do give these cheesy, curry biscuits a try!

190ml flour
2,5ml salt
5ml turmeric
10ml mild curry powder
83ml butter, cubed
250ml cheddar cheese, finely grated
250ml pecorino cheese, finely grated

Preheat your oven to 180℃ and line a baking sheet with baking paper.
Combine the flour, salt, turmeric and curry powder in a mixing bowl.
Add the cubed butter and rub the mixture together with your fingers until you are left with pea-sized clumps of butter and flour.
Add the grated cheddar and pecorino cheese and mix through.
Now knead/push the mixture together with the heel of your hand so that if forms a dough ball. It takes a while to come together, just keep kneading/pushing.
Lightly flour a work surface and roll the dough to a 5mm thickness.
Cut out shapes with biscuit cutters and transfer them to the prepared baking sheet.
Bake the biscuits for about 12 minutes.
Take them from the oven and cool in the baking sheet for 10 minutes before removing them to cool completely.
Store the biscuits in an airtight glass jar.
