Coca Cola Sheet Cake

Not a true cake but rather a delicious concoction of brownies and fudge!!! Easy and quick for every lover of sweetness!

500ml sugar
500ml flour
375ml marshmallows, shredded (about 14 large)
125ml butter
125ml vegetable oil
62ml cocoa powder, sifted
250ml Coca Cola
125ml buttermilk
5ml baking powder
2 eggs, lightly beaten
10ml vanilla

Frosting:
450ml icing sugar, sifted
125ml butter
45ml cocoa powder, sifted
30ml Coca Cola
5ml vanilla
250ml pecan nuts, roughly chopped

Preheat your oven to 180℃ and spray an oven tray/sheet pan with cooking spray.
Add the sugar, flour and marshmallow to a large mixing bowl.
Add the butter, oil, cocoa powder and Coca Cola to a saucepan and bring to a boil.
Pour the hot mixture onto the marshmallow mixture and stir until well blended – some of the marshmallow will melt, but not all of it.
Pour the buttermilk into a small bowl and dissolve the baking powder in it. Add to the rest of the mixture and mix through.
Now add the eggs and vanilla and give the mixture a last stir.
Pour the batter in to the prepared oven tray and bake for 45 minutes.

For the frosting:
Sift the icing sugar in to a mixing bowl.
Add the butter, cocoa powder and Coca Cola to a saucepan and bring to a boil.
Pour the hot liquids on to the icing sugar and blend well.
Add the vanilla and nuts, stir through and spread onto the cake as soon as it comes out of the oven.
Set aside and allow the cake to cool before serving.

Chocolate Layer Brownies

Chocolate Layer Brownies

145g butter
250g sugar
80g cocoa powder, sifted
1,2ml salt
7,5ml vanilla
2 eggs
65g flour
75g pecan nuts, roughly chopped
2 x 80g slabs of chocolate

Preheat your oven to 180℃ and line a 20cm x 20cm baking tin with baking paper.
Add the butter, sugar, cocoa powder and salt to a heatproof bowl set over a saucepan of simmering water.
Stir the mixture every now and then until the butter has melted and the mixture is amalgamated.
Remove the bowl from the saucepan and add the vanilla.
Stir through.
Add the eggs one-by-one and beat to incorporate, with a wooden spoon.
Add the flour and beat again to incorporate.
Add the pecan nuts and stir through.
Spoon half the batter in to the prepared baking tin and spread it out evenly.
Place the chocolate slabs, side-to-side, on the batter and cover with the rest of the brownie batter.
Bake in the oven for 25 minutes.
Remove the brownies from the oven and cool completely.
Slice into 16 squares.

Chocolate Pudding Cake

190ml flour
60ml cocoa powder, sifted
80ml granulated sugar
1,2ml salt
10ml baking powder
1 egg
55g butter, melted
80ml milk
5ml vanilla
80g chocolate, chopped
125ml pecan nuts, chopped
80ml granulated sugar
80ml brown sugar
80ml cocoa powder, sifted
375ml strong coffee

Preheat your oven to 180℃ and spray a 20cm x 20cm baking tin with cooking spray.
Add the flour, cocoa powder, sugar, salt and baking powder to a mixing bowl and stir together with a whisk.
Add the egg, melted butter, milk and vanilla to a jug and whisk together.
Pour the wet ingredients in to the dry ingredients.
Add the chopped chocolate and nuts and stir to mix.
Spoon the batter in to the prepared baking tin.
Add the 80ml granulated and brown sugar and the cocoa powder, to a bowl and mix.
Sprinkle the mixture over the cake batter.
Pour the coffee over and bake in the oven for 25 minutes.
Serve the chocolate pudding cake with cream or ice cream.

Chocolate Brownie Biscuits

Chocolate Brownie Biscuits

These biscuits have a crackly crust and a heavenly chewy, fudge centre and will become one of your favourite chocolate treats! Make sure to bake these with a good quality chocolate with at least 70% cocoa solids.

220g dark chocolate, finely chopped (I used coffee flavoured chocolate, you don’t have to but do make sure that your chocolate has at least 70% cocoa solids)
90ml butter, melted
190ml brown sugar
62ml white sugar
2 eggs
190ml flour
60ml cocoa powder, sifted
10ml espresso coffee powder
1,2ml salt

Preheat your oven to 180℃ and line 2 baking sheets with baking paper.
Add the chocolate and butter to a heatproof bowl set over a saucepan of simmering water. Stir every now and then until the chocolate is melted and the mixture has amalgamated. Take the bowl from the heat and set aside.
Add the eggs, brown sugar and white sugar to the bowl of a stand mixer fitted with the paddle attachment.
Beat the mixture together at high speed for 3 – 4 minutes.
Turn the mixer speed down to low and pour in the chocolate mixture with the machine running.
Add the flour, sifted cocoa powder, baking powder and salt to a mixing bowl and stir together until well mixed.
Remove the mixing bowl from the stand mixer and add the dry ingredients. Fold through with a spatula.
Spoon about 15ml of the batter onto the prepared baking sheet, leaving room for the biscuits to spread.
Bake for 10 minutes.
Cool the biscuits on the baking sheet before storing/serving.

Chocolate Swirl Brownies

Chocolate Swirl Brownies

150g butter, melted
250ml sugar
45ml espresso
2 eggs
5ml vanilla
80g dark chocolate, melted
190ml flour
60ml cocoa powder, sifted
2,5ml salt
80g dark chocolate, chopped

Cheesecake Swirl:
125g cream cheese, room temperature
80ml sugar
1 egg yolk
5ml vanilla

Preheat your oven to 180℃ and line a 20cm x 20cm baking tin with baking paper.
Add the melted butter and sugar to a large mixing bowl and whisk together.
Add the espresso, eggs, vanilla and melted chocolate and whisk to combine.
Now add the flour, cocoa powder and salt.
Fold the ingredients together until you have a smooth batter.
Add the chopped chocolate and fold through.
Scrape the mixture into the prepared baking tin and set aside.

For the cheesecake swirl:
Add the cream cheese, sugar, egg yolk and vanilla to a mixing bowl and whisk together until smooth.
Spoon dollops of the cheesecake batter across the surface of the brownie mixture.
Swirl the cheesecake mixture through the brownie batter with a small knife.
Bake in the oven for 20 minutes.
Cool the brownies in the baking tin before removing and slicing.

Condensed Milk Brownies

Condensed Milk Brownies

1 x 385g can of condensed milk
60g butter, softened
190ml sugar
10ml vanilla
2 eggs
125ml flour
125ml cocoa powder, sifted
1,2ml salt
80g dark chocolate, finely chopped
80g dark chocolate, chopped
a handful of pistachio nuts

Preheat your oven to 180℃ and line a 20cm x 20cm baking tin with baking paper.
Add the condensed milk, butter and sugar to a large mixing bowl and cream together with a hand-held mixer, until smooth.
Add the vanilla and eggs and mix for another minute.
Now add the flour, cocoa powder and salt and mix again on low speed.
Add the chopped chocolate and stir through with a spatula.
Pour the batter into the prepared baking tin and bake for 45 minutes.
Remove from the oven and cool in the baking tin.
Add the 80g chocolate to a heatproof bowl set over a saucepan with simmering water and allow to melt.
Drizzle the chocolate over the brownies and sprinkle the pistachio nuts on top.
Slice and serve.

Pistachio Chocolate Brownies

Pistachio Chocolate Brownies

380g soft butter
320g chocolate, chopped
6 eggs
15ml vanilla
500g sugar
230g flour
5ml salt
300g pistachio nuts, roughly chopped

Preheat your oven to 180℃ and line an oven tray with aluminium foil.
Melt the butter and chocolate together over a very low heat.
Take from the heat and allow to stand for 10 minutes so that it cools down slightly.
Add the eggs, sugar and vanilla to a mixing bowl and beat with an electric whisk until the sugar has dissolved.
Now beat the egg mixture into the chocolate mixture.
Add the flour, salt and nuts and mix through.
Pour the batter into the prepared baking tray and bake for 30 minutes.
The top should be dried and pale and the middle still dark and gooey!!
Enjoy as is or serve slightly warm with vanilla ice cream.


Milk Chocolate Brownies

Milk Chocolate Brownies

These brownies are fudgy and chocolatey and all things fabulous and delectable! Easy to make and keeps well in a sealed container for 3 – 4 days.

125g butter, cubed
120g +120g milk chocolate
375ml brown sugar
15ml vanilla
2 eggs
250ml + 62ml flour
15ml cocoa powder
2,5ml salt
1,2ml baking powder

Preheat your oven to 180℃ and line a 20cm X 20cm X 5cm cake tin with baking paper.
Add the butter to a heatproof bowl.
Break the chocolate into pieces and add it to the butter.
Set the bowl over a saucepan with simmering water and allow to melt.
Remove the bowl from the heat and stir the mixture to amalgamate. Set aside, stirring every now and then, to cool until lukewarm.
Add the sugar and vanilla to the chocolate mixture and stir through.
Add the eggs one at a time and beat well with a hand whisk. You want a glossy, smooth mixture.
Sift the flour, cocoa powder, salt and baking powder together and add it to the chocolate mixture. Mix through.
Chop the remaining 120g milk chocolate in to chunks the size of peas.
Stir the chocolate into the brownie mixture.
Scoop the batter into the prepared baking tin and bake for 30 minutes.
Remove from the oven and cool completely before slicing it into 16 squares.
The brownies keep well in a sealed container for 3 – 4 days.

Sweet Potato Brownies

Sweet Potato Brownies

These brownies are moist with an intense chocolate taste and surprisingly, very light in texture. Store them in a sealed container at room temperature for 3 – 4 days.

100g butter
250g dark chocolate, chopped
250ml sweet potato, cooked and mashed
125ml brown sugar
250ml granulated sugar
4 eggs
7,5ml vanilla
2,5ml salt
165ml flour
125ml cocoa powder

Preheat your oven to 180℃.
Line a baking tin, 18cm X 28cm or 23cm X 23cm with baking paper.
Add the butter to a small saucepan and place on medium to high heat.
Take the saucepan off the heat as soon as the butter starts to make small bubbles and add the chopped chocolate. Leave to stand for 5 minutes.
Add the mashed sweet potato, brown sugar, granulated sugar, eggs, vanilla and salt to a mixing bowl and whisk together.
Return to the butter and chocolate and whisk the mixture until the chocolate has melted and you are left with a smooth, emulsified mixture.
Add the chocolate and butter mixture to the sweet potato mix and stir through.
Sift the flour and cocoa powder into the same bowl and mix until incorporated.
Spoon the mixture into the prepared baking tin and bake for 35 minutes or until a toothpick inserted into the cake, comes out clean.
Cool the brownies completely, on a cooling rack.
Store in an airtight container for 3 – 4 days, at room temperature.
