Whipped Feta Salad

200g + 50g feta, crumbled
100ml milk
350g cherry tomatoes, halved
1 small cucumber, diced
a handful of basil, chopped
half an onion, finely chopped
30ml balsamic vinegar
30ml olive oil
20g pine nuts, toasted

Crumble the feta into a blender’s cup and add half the milk.
Blitz with an immersion blender until it becomes emulsified – add the rest of the milk a little at a time, aiming for a creamy consistency that will sit on a plate.
Crumb the 50g feta into the whipped feta and spread on a serving plate.
Add the halved tomatoes, cucumber, basil and onion to a mixing bowl and pour over the balsamic, olive oil and salt and pepper.
Mix together and spoon on to the whipped feta.
Scatter over the toasted pine nuts and a few extra basil leaves.

Onion Pie

Onion Pie

1 packet frozen puff pastry
30ml olive oil
2 large onions, thinly sliced
5 eggs
125ml milk
125ml cream
5ml salt
15ml onion seeds
250ml grated mature cheddar cheese

Preheat your oven to 190℃ and spray a deep pie dish (or a loose-bottom cake tin) with cooking spray.
Line the pie dish with the pastry. The sides should come up 4cm.
Pour the olive oil into a saucepan set over medium-high heat and add the onions.
Cook until soft, remove from the saucepan and set aside to cool.
Add the eggs, milk, cream, salt and onion seeds to a large jug and whisk together.
Add the grated cheddar to the cooled onions and mix through.
Spoon the onion mixture into the pastry lined baking tin.
Pour the egg mixture over and bake for one hour.
Serve the pie warm with a salad on the side.

Quick Beetroot Salad

Quick Beetroot Salad

4 beets, cooked, peeled and cubed
30ml olive oil
30ml balsamic vinegar
1 small red onion, cut into thin slices
a pinch of salt
30ml chopped chives
a handful of walnut halves
50g feta cheese

Add the cubed beetroot, olive oil, balsamic, red onion and pinch of salt to a bowl and mix together.
Spoon onto a serving platter and scatter over the chives and walnuts.
Top the salad by crumbing the feta over.

Tomato Tart

Tomato Tart

1 x 400g roll Today puff pastry
egg wash: 1 egg yolk + 15ml water beaten together
4 large tomatoes
a handful of basil
olive oil
balsamic vinegar

Preheat your oven to 200℃ and line a baking sheet with baking paper.
Unroll the puff pastry and place it on the paper. (Trim the pastry to fit the baking sheet)
Lightly score the pastry down the centre in the length. Now score it in half and then halve each square. You should have 8 squares – be careful to score and not cut through!
Whisk together the egg yolk and water and lightly brush the pastry all over.
Refrigerate until needed.
Fill a large pot with water and bring it to the boil.
Make a cross incision (x) in the tomato skin on the bottom.
Fill a large bowl with ice water.
Now lower the tomatoes into the boiling water and simmer for 1 minute.
Remove with a slotted spoon and immediately plunge it into the ice water.
Remove the skins once they start to curl back from the flesh.
Halve the naked tomatoes horizontally.
Remove the pastry from the refrigerator.
Place a basil leave in the centre of each of the marked squares.
Place half a tomato, cut-side down on the basil and drizzle the tomato with a few drops of oil.
Season with salt and pepper and bake for 25 minutes.
Remove the tart from the oven and drizzle with balsamic vinegar while very warm.
Slice the tart into 8 portions and serve as a side.

Chilli Cheese Garlic Bread

Chilli Cheese Garlic Bread

1 x 250 g bottle of cheese spread
150g butter, cubed
6 cloves of garlic, minced
2 red chillies, very finely chopped
250ml grated mozzarella cheese
2 sourdough loafs or baguettes

Preheat your oven to 200℃.
Add the cheese spread, butter, garlic and chillies to a small saucepan and place over a low heat.
Stir the mixture around while the butter melts. Keep going until amalgamated.
Add the grated mozzarella and stir until the cheese has melted and has incorporated into the sauce. Take from the heat.
Slice the bread on the diagonal into slices 2cm apart, taking care not to go all the way through to the bottom.
Spread the cheese mixture generously between the slices.
Wrap the bread in foil. (You may freeze one loaf at this stage).
Place the loaf on a baking sheet and put into the oven for 30 minutes.
Serve immediately.

Basting Sauce for Grilled Vegetables

Basting Sauce for Grilled Vegetables

Whether you choose to cook your vegetables on an open fire or in roast them in the oven , this is the sauce to boost that flavour and have everyone coming for seconds!

30ml butter, melted
15ml vegetable oil
15ml wholegrain mustard
20ml lemon juice
30ml thyme leaves
1ml salt

Add all the ingredients to a small mixing bowl and whisk together.

Flame grill:
Place your selection of vegetables on the griddle over medium hot coals.
Baste and turn the veg every 1-2 minutes for about 12 minutes in total – this of course depends on the veg you chose!
Remove from the heat and serve as a side.

Oven roasting:
Preheat your oven to 200℃ and place your selection of vegetables on a roasting tray.
Liberally baste the veg with the sauce and place in the oven for 7 minutes.
Open the oven and baste and turn the vegetables before roasting for another 5-7 minutes more, depending on the vegetables you have chosen to roast.
Serve immediately.
