4 slices of bread
fresh fruit like strawberry, blueberries, raspberries, peach slices
125ml yoghurt
1 egg
10ml honey
1,2ml ground cinnamon
zest of 1 lemon
Preheat your oven to 200℃ and line a baking sheet with baking paper.
Place the slices of bread on the prepared baking sheet and indent the bread with the back of a spoon – this will help keep the custard in place.
Add the yoghurt, egg, honey, cinnamon and lemon zest to a small mixing bowl and whisk together until combined and the mixture looks like custard.
Spoon the custard into the bread and top it with a few slices of strawberries.
Bake in the oven for 12 minutes. Keep an eye on the toast as some breads burn easier than others – the custard must be set and not jiggly for it to be done.
Pile some more fruit on the toasts and drizzle with extra honey before serving.
