Chunky Vegetable Soup

The garnish for this vegetable soup was made by horizontally slicing a hotdog roll, drizzling it with olive oil and toasting it in the oven. The garnish on the crouton is homemade mayonnaise with cherry tomatoes and fresh soft herbs.

1 onion, chopped
2 cloves of garlic, minced
2 sticks of celery, leaves included, washed and chopped
1 x 400g tin of chopped tomatoes
1 litre chicken or vegetable stock
2 bay leaves
3 carrots, chopped
400g potato, peeled and cubed

Place a large saucepan over medium heat and add some vegetable oil.
Add the onion, garlic and celery and cook for about 10 minutes.
Add the tinned tomato and cook for another 10 minutes.
Pour in the stock, add the bay leave, carrot and potato and bring to the boil.
Turn the heat down to a simmer and cook for 50 minutes, stirring every now and then.
Mash or liquidise half of the soup, cook another 5 minutes and serve with a fresh, crusty bread.

Pulled Brisket with gnocchi and gremolata

1kg brisket, fat on
2 onions, chopped
5 cloves of garlic, minced
2 carrots, chopped
1 x 400g tin of diced tomatoes
240g tomato purée
60ml Worcestershire sauce
60ml apple cider vinegar
20ml wholegrain mustard
30ml brown sugar
10ml smoked paprika
store bought gnocchi

Preheat your oven to 160℃.
Add the onion, garlic, carrot and tinned tomato to a food processor and blitz until it is a thick saucy mixture.
Pour in the tomato purée, Worcestershire sauce, vinegar, sugar and paprika and blitz again.
Add 5ml salt and stir through.
Decant the sauce into an ovenproof saucepan.
Place the brisket on top of the sauce and then spoon enough of the mixture over to cover the meat.
Place a lid on the saucepan and bake in the oven for 4 hours.
Remove the brisket from the oven, take off the lid and leave to cool for 15 minutes or so.
Pull the meat and fat apart with two forks and add it to a saucepan.

Cook your gnocchi according to packet instructions.
Place the saucepan with the meat over a low heat, add the gnocchi and stir through.
Serve warm with gremolata.

Vegetable Cacciatore

Vegetable Cacciatore

The traditional Italian cacciatore is made with poultry and celebrates generosity and variety. This is my vegetarian interpretation and will feed six people when served with mashed potato or polenta.

90ml olive oil
250g button mushrooms
2 medium aubergines, diced
2 onions, diced
2 cloves of garlic, minced
3 carrots, peeled and cut into small chunks
2 medium red sweet peppers, sliced in strips
250ml dry red wine
2 x 400g tins of chopped tomato
2 x 400g tins of butter beans
250ml whole black olives
500ml vegetable stock
125ml parsley, chopped
5ml salt
black pepper

Heat the oil in a large saucepan on a high heat.
Add the mushrooms and aubergine and fry for a few minutes until browned.
Remove from the saucepan with a slotted spoon and keep aside.
Lower the heat to medium and add the onion and garlic and cook until the onion is soft.
Add the carrot and sweet peppers and fry for a minute or so.
Pour in the wine and simmer until the wine is reduced completely.
Add the tomato, beans, olives, stock and salt and simmer for 5-10 minutes, stirring occasionally.
Add the cooked mushrooms and aubergine and stir through. Simmer for a further 5 minutes.
Take the saucepan from the heat and add the parsley.
Taste the dish and adjust the seasoning.
Serve on mashed potato or polenta and a generous drizzle of olive oil.
