Chicken and Sweet Corn Soup

This is a nutritious soup and is perfect to make with cooked, left-over chicken.

2 chicken breast fillets
1,5l chicken stock
10ml sesame oil
2,5ml ground ginger
1 x 375g can of sweet corn
30ml cornflour
2 eggs
a handful of chopped chives
one packet baby corn

Place the chicken breasts in a saucepan set over medium-high heat and cover with 1 litres of the stock. Add a pinch of salt and cook until the chicken is done.
Remove the meat, but keep the stock.
Shred the chicken into large strips by pulling it apart with two forks.
Top up the chicken stock so that you have 1 litre again.
Add the sesame oil, ginger powder and sweet corn and bring to a boil.
Add the shredded chicken and bring the mixture to a simmer.
Add the cornflour to a small bowl and pour in about 60ml of the stock from the saucepan.
Stir to make a runny paste.
Drizzle the cornflour into the saucepan in a thin stream while stirring continuously.
Add the eggs to a small bowl and whisk together.
Add a spoonful of the stock in the saucepan to the eggs and whisk again.
Now, slowly drizzle in the egg while stirring.
Remove the soup from the heat, add the corn and chives and serve immediately.

Prawn and Basil Salad

Prawn and Basil Salad

500g pasta of your choice
1 x 245g sachet pickled peppers, diced and liquid reserved
500g prawns, deveined
250ml salad cream/creamy mayonnaise
250ml yoghurt
2 big handfuls of basil leaves
half an English cucumber, diced

Cook the pasta according to packet instructions and drain.
Take the pickled peppers from the sachet and chop. Set the peppers aside.
Drizzle the pickling liquid over the warm pasta and stir through. Set aside to cool.
Bring a pot of salted water to the boil, add the prawns and cook for 4 minutes. Drain and set aside to cool.
Add the salad cream, yoghurt and basil leaves to a blender and process until you have a light green dressing.
Season the dressing with salt and pepper.
Add the pasta, prawns, cucumber, peppers and basil dressing to a large bowl and mix through.
Scatter some basil leaves on top and serve.


Goat Cheese Risotto

Goat Cheese Risotto

This recipe feeds 6 adults as a main or 8-10 as a starter.

2l chicken/vegetable stock

45ml butter
45ml olive oil
1 onion, finely diced
2 cloves of garlic, minced
400g arborio rice
150ml white wine
200g goat cheese
250g parmesan cheese, grated plus extra for serving

Pour the chicken stock into a saucepan, bring to a boil and then turn the heat down to a low simmer.
Add the butter and olive oil to a large, wide saucepan set over medium-high heat and wait for the pan to heat up.
Add the onion and cook until translucent.
Add the garlic and stir-fry for one minute.
Add the rice and stir to coat with the butter and oil. Fry the rice for at least 2 minutes.
Pour in the wine and keep stirring until the liquid has evaporated.
Add about half a cup/two soup ladles of chicken stock and simmer until the stock is absorbed. Continue cooking the rice, adding half a cup of stock at a time, stirring constantly and allowing each addition of the stock to absorb before adding the next, until the rice is tender but still firm to the bite.
Remove from the heat and stir in the parmesan cheese.
Crumb half of the goat cheese into the mixture and stir through.
Slice the other half of the goat cheese into wheels and brûlée with a blow torch until charred.
Place the goat cheese on the risotto, add some extra butter and serve immediately.


Spicy Mexican Soup

Spicy Mexican Soup

3 litres chicken stock
1,5kg chicken breasts, skin removed
5ml black peppercorns
5ml salt
2,5ml smoked paprika
3 x 400g tins chopped tomato
2 large onions, chopped
3 cloves garlic, minced
3 x 400g jars sweet jalapeño, drained
30ml + 30ml vegetable oil
120g spaghetti
fresh coriander
lime wedges

Add the stock to a saucepan and bring to a simmer.
Cut the chicken breasts into chunks and add it to the stock.
Add the black peppercorns, salt and smoked paprika and simmer together for 30 minutes. Set aside.
Add the tomato, onion, garlic and jalapeño to the bowl of a blender and process until smooth.
Add 30ml oil to a large saucepan set over medium-high heat and add the tomato mixture to it.
Bring to a low simmer and cook half-covered for 10 minutes.
Remove the cooked chicken pieces from the stock and finely shred the meat.
Pour the stock into the tomato mixture.
Simmer the mixture for 20 minutes.
Now add the shredded chicken and cook for another 10 minutes.
Taste the soup and adjust the seasoning – salt, black pepper, smoked paprika.
Place a frying pan over medium-high heat, add 30ml vegetable oil and add the spaghetti to the pan.
Stir continuously while frying the spaghetti until it is a golden brown colour – about 3 minutes.
Drain the pasta on paper towel and then add it to the soup.
Simmer the soup for about 8 minutes, until the pasta is cooked.
Serve the soup immediately with fresh coriander and lime wedges.

Leek and Cheese Soup

Leek and Cheese Soup

45ml butter
15ml vegetable oil
2 large leeks, sliced
2 onions, chopped
2 cloves of garlic, minced
600g potato, peeled and diced
2litres chicken stock
5ml salt
black pepper
200g mature cheddar cheese, grated
80g cheese and onion potato chips

Add the butter and oil to a large saucepan set over medium-high heat.
Add the leeks and onion and cook while stirring until completely wilted and soft.
Add the garlic and cook for another minute.
Add the diced potato, stock, salt and pepper and bring the mixture to a simmer.
Lower the heat to a slow simmer, cover the saucepan with a lid and cook for about 30 minutes. Check on the soup every now and then and adjust the heat as you go. The potato must be very soft.
Decant the soup into a blender and blitz together until smooth and silky.
Pour the soup back into the saucepan and place over a low heat.
Add the grated cheese and stir the soup until the cheese has melted.
Spoon the soup into individual bowls.
Crush the potato chips in the packet and sprinkle a generous amount onto each bowl of soup.
Serve immediately.

Chicken Tikka Masala

Chicken Tikka Masala

Quick marinade:
9 chicken breasts, skinless and deboned, cut into bite-size portions
250ml yoghurt
15ml ground ginger
15ml garam masala
10ml turmeric
5ml ground cumin
2,5ml smoked paprika
3 cloves of garlic, minced
5ml salt

Sauce:
45ml vegetable oil
45ml butter
1 onion, chopped
2 cloves garlic, minced
1cm fresh ginger, grated
10ml garam masala
5ml ground cumin
5ml turmeric
5ml ground coriander
1 x 400g tin chopped tomatoes
5ml smoked paprika
5ml salt
375ml cream
30ml brown sugar

For the marinade:
Add all the ingredients, including the chicken, to a mixing bowl and stir together.
Cover the bowl and place in the refrigerator for a minimum of 30 minutes or overnight.

Add half the oil and butter to a frying pan over medium-high heat.
Add the chicken in small batches and fry for about 3 minutes before removing and adding the next batch of chicken.
Keep the fried chicken to the side and keep going until all of the chicken has been fried.
Add the remaining oil and butter to a saucepan set over medium-high heat.
Add the onion and cook until soft.
Now add the garlic and fresh ginger and stir-fry for one minute.
Add the garam masala, cumin, turmeric and coriander and cook for another minute.
Add the chopped tomatoes, paprika and salt and simmer the sauce for 10 minutes.
Decant the sauce to a blender and whizz until smooth.
Pour the sauce back into the saucepan and add the cream, sugar and chicken pieces and simmer gently for 20 minutes.
Serve the tikka masala with a fragrant rice and lashings of the sauce.


Cottage Pie

Cottage Pie

30ml sunflower oil
2 cloves garlic, minced
1 onion, finely chopped
2 carrots, finely chopped
1kg minced beef (ground beef)
62ml flour
50g tomato paste
500ml beef stock
125ml red wine (or water)
5ml stock powder
30ml Worcestershire sauce
15ml thyme leaves
2 bay leaves
5ml salt
2,5ml ground black pepper

Topping:
1,2kg potatoes, peeled and cubed
125ml milk, warmed
100g butter, cubed
60g butter, melted
40g grated parmesan cheese

Place a saucepan on medium-high heat and add the oil to it.
Add the garlic and onion and cook for 1 minute.
Add the carrot and cook for another 3 minutes while stirring every now and then.
Turn the heat up and add the beef. Break the meat up with a wooden spoon and stir around until loose and browned from cooking.
Sprinkle the flour over the beef and stir through.
Add the tomato paste, beef stock, red wine, stock powder, Worcestershire sauce, thyme leaves, bay leaves and salt and pepper.
Stir the mixture and bring it to a simmer. Turn the heat to medium and cook for 30 minutes, stirring occasionally.
You should now have a reduced, gravy consistency that isn’t watery.
Taste the beef and adjust the seasoning according to taste.
Spoon the mixture into a 18cm x 28cm ovenproof dish and allow it to cool. If the meat is cool when you add the mashed potato topping, the meat won’t cook through the topping.

Preheat your oven to 180℃.
Cook the potatoes in a saucepan with boiling water for 20 minutes. Drain the potatoes and add them back to the saucepan.
Add the warmed milk and 100g butter and mash the potato until smooth.
Season with salt.
Spread the mash on the beef and rough up the surface with a fork.
Sprinkle the melted butter over and top with a sprinkling of the parmesan.
Bake the cottage pie for 30 minutes until it is beautifully golden on top and bubbling on the edges.
Serve piping hot.

French Onion Tart

French Onion Tart

The South African cook and food blogger, Elmarie Berry has recently launched her recipe book Kosbaar. This is my interpretation of her delicious French Onion Tart.

1 batch Caramelised Onions, search the recipe on this blog
250g puff pastry, store bought
250ml sour cream
2 eggs
30ml thyme leaves
parmesan cheese, to grate on top

Preheat your oven to 200℃ and spray a 20cm loose bottom tart tin with cooking spray.
Line the tart tin with the puff pastry.
Spoon the cooled Caramelised Onions into the unbaked tart shell and spread it out evenly.
Whisk the sour cream, eggs and thyme together and pour over the onions.
Grate a good amount of Parmesan cheese on top and bake in the oven for 20 minutes.
Cool the tart on a cooling rack before taking it out of the tart tin.
Serve at room temperature.

Pork Chops with Thai Peanut Sauce

Pork Chops with Thai Peanut Sauce

80ml flour
5ml salt
6 pork chops
62ml chicken stock
125ml coconut milk
30ml peanut butter
15ml honey
5ml ground ginger
2,5ml salt
80ml peanuts

Place a heavy based frying pan on medium-high heat and add some vegetable oil to it.
Mix the flour and salt together in a shallow dish.
Dredge the chops in the flour and fry 4 minutes per side. Keep warm.
Add the stock, coconut milk, peanut butter, honey, ginger and salt to a small saucepan and place on medium heat.
Whisk the ingredients together until the peanut butter has melted and the sauce comes together.
Allow the sauce to simmer on a low heat for 3-4 minutes.
Spoon the sauce on the pork chops and sprinkle some peanuts on top.
