Breakfast Tortilla Bake

1 large tortilla
1 onion, sliced
1 sweet pepper, sliced
100g + 100g cheddar cheese, grated
100g baby spinach
4 eggs

Preheat your oven to 190℃.
Lay the tortilla flat in a cast iron (or any other oven-friendly)pan and press it down slightly so that it covers the bottom and comes about halfway up the sides.
Sprinkle 100g of the cheddar cheese over the bottom of the tortilla.`
Spread the sliced onion over the cheese and then scatter over the sliced sweet pepper.
Place the spinach onto and spread it out evenly to cover the rest of the ingredients.
Break the eggs on the spinach leaves and season with salt and pepper.
Sprinkle the remaining 100g cheddar over and bake in the oven for 15 minutes.
Serve the tortilla with a good, crusty bread.

I am listing the ingredients and the method but the quantities are loose and depends on how many people you will feed.

tortilla wraps
marinara or any other tomato-based pasta sauce
salami or pepperoni
mozzarella cheese
fresh basil leaves
a hard cheese like parmesan

Preheat your oven to 190℃.
Once the cheese has melted (about 15 minutes) the tortilla snack is ready to serve.

Pull-Apart Tortilla Wraps

1 onion, diced
2 cloves of garlic, minced
2 sweet peppers, diced
600g minced beef
30ml tomato purée
30ml Worcestershire sauce
3 large tomatoes, diced
3 spring onions, sliced
60ml coriander, chopped
10 large tortilla wraps
150g + 150g cheddar cheese, grated

Preheat your oven to 180℃ and spray a 22cm loose-bottom cake tin with cooking spray.
Place a saucepan on medium-high heat and add a dash of vegetable oil.
Add the onion and cook until translucent.
Add the garlic and sweet pepper and cook while stirring occasionally until the peppers are softened.
Add the minced beef, tomato purée and Worcestershire sauce, season with salt and pepper and turn up the heat.
Break the mince up with the back of a wooden spoon and cook until there is no liquid left.

For the salsa:
Add the diced tomato, spring onions and coriander to a bowl.
Season with salt and pepper. Set aside.

To assemble:
Lay the tortilla wraps on a chopping board and trim the left and right edges so that they are square.
Spoon some of the mince mixture on the curved edge closest to you.
Spoon some salsa on the mince and scatter with grated cheese.
Roll the tortilla into a fairly tight cylinder.
Repeat with the other ingredients.

Slice each tortilla roll into 3 equal rolls.
Pack the rolls cut side up, in the cake tin. Start on the outer edges and work towards the centre.
Sprinkle the remaining 150g cheese over the rolls.
Bake in the oven for 30 minutes.
Remove the outer ring of the cake tin and serve immediately.

Frittata with Potato Crisps

Frittata with Potato Crisps

8 eggs
62ml sour cream
200g roasted red peppers (store bought or home made)
45ml thyme leaves
140 potato crisps (chacalaka/tomato sauce/cheese and onion)
30ml butter
50-100g goats cheese

Preheat your oven to 180℃.
Crack the eggs in a large mixing bowl and whisk together.
Add the sour cream, season the mixture with salt and pepper and whisk again.
Chop the roasted peppers into chunks and add to the egg mixture.
Add the thyme leaves and all of the potato chips.
Mix everything together with a spatula.
Place an ovenproof frying pan on medium heat, add the butter and wait for it to melt.
Add the frittata mixture to the pan and stir around for a few minutes, lightly scraping the bottom of the pan.
Spread the ingredients evenly with the spatula and place the pan in the oven.
Bake for about 10 minutes, or until the frittata is set.
Dot the goats cheese on the frittata’s surface and serve warm with a side salad.
