Glazed Sweet Potato

300g butter, cubed
250ml brown sugar
30ml flour
2,5ml ground cinnamon
250ml orange juice
grated zest of one orange
1 orange sliced into wedges
1kg sweet potato, peeled and sliced into 1,5-2cm thick slices

Place a large shallow saucepan over medium-high heat.
Add the butter and brown sugar and allow to melt.
Scatter the flour over and stir until thickened and smooth.
Add the cinnamon.
Drizzle in the orange juice while whisking and then add the zest and the wedges.
Now add the sweet potato chunks, cover with a lid, turn the heat down to medium and cook without stirring for about 40 minutes.
Remove the lid once the sweet potato is cooked and allow the extra moisture to cook off.
Serve warm.

Sweet Potato Pecan Crumble

Sweet Potato Pecan Crumble

1kg sweet potatoes
60ml butter, softened
5ml salt
1,2ml cinnamon
grated zest of one orange
30ml orange juice
125ml cream
60ml brown sugar

Pecan crumble:
250ml pecan nuts
30ml brown sugar
2,5ml salt
30ml butter, softened
grated zest of one orange

Preheat your oven to 200℃ and line a baking sheet with aluminium foil.
Wash and dry the sweet potato and space them evenly apart on the baking sheet.
Place in the oven for one hour, remove and cool until the sweet potato can be handled comfortably.
Spray an ovenproof dish of 20cm x 20cm with cooking spray.
Scoop the flesh from the sweet potato and add it to a food processor with the butter, salt, cinnamon, orange zest, orange juice, cream and brown sugar.
Process until smooth.
Pour the mixture into the prepared baking dish and set aside.

Add the pecan nuts, sugar, salt, butter and orange zest to a food processor and blitz together.
Sprinkle the crumble over the sweet potato mixture.
Bake in the oven for 25 minutes, remove and serve warm.

Sweet Potato Slices

Sweet Potato Slices

3 large sweet potatoes
125ml vegetable oil
3 cloves of garlic, minced
250ml sour cream
100g feta cheese, crumbled

Preheat your oven to 160℃ and line a baking sheet with baking paper.
Wash the sweet potatoes with their skin on and cut them in 0,5cm slices.
Boil the slices in water until just cooked. Drain and dry the slices with a clean kitchen towel.
Spread the sweet potato on the prepared baking sheet.
Add the vegetable oil and garlic to a small bowl and mix together.
Brush the slices with the garlic mixture, season with salt and flip them over. Brush again and season with salt.
Place the baking tray in the oven and bake for 25 minutes.
Add the sour cream to a small bowl and crumble the feta over. Mix through.
Serve the sweet potato slices warm with a generous dollop of sour cream and feta on top.

Sweet Potato Gratin

Sweet Potato Gratin

1kg sweet potatoes, peeled
250ml grated Gruyére cheese
250ml grated cheddar cheese
2 cloves garlic, minced
375ml cream
15ml thyme leaves, chopped
1ml ground nutmeg

Preheat your oven to 180℃ and spray a ceramic dish with cooking spray. Set aside.
Slice the sweet potatoes into very thin slices – not thicker than 2mm.
Arrange the slices in a single layer overlapping slightly, in the oven dish.
Mix the two cheeses together and sprinkle a quarter of the cheese on the sweet potato. Keep going with the layers until you have a quarter of the cheese left. Set aside.
Add some vegetable oil to a saucepan set over medium heat. Add the garlic and cook while stirring, for about 1 minute.
Pour in the cream, thyme and nutmeg and simmer the mixture for about 5 minutes. It should thicken slightly.
Add the last quarter of the cheese to the saucepan and stir through until melted.
Season the cream with salt and pepper and pour it over the sweet potatoes.
Place the dish in the oven and bake until golden brown and bubbly – about 45minutes. Check that it is fully cooked by inserting a sharp knife in the centre.
Remove the gratin from the oven, rest for 15 minutes and serve.

Sweet Potato Cakes

Sweet Potato Cakes

750g cooked and mashed sweet potato (about 4 medium sweet potatoes)
125ml self-raising flour
1 X 375ml can of Corn kernels, drained (you may substitute with cooked corn)
125ml pumpkin seeds
1 egg
2,5ml salt
2,5ml cinnamon
63ml brown sugar
vegetable oil to fry

Add all the ingredients to a large mixing bowl and mix through.
Place a heavy bottom pan onto medium-high heat and cover the bottom with vegetable oil to heat up.
Scoop a tablespoonful of the mixture into the pan and fry for 2-3 minutes before flipping and frying the other side for another 2-3 minutes. Do not overfill your pan as you want the sweet potato to caramelise and fry to a golden, crisp outside. Keep going until all the mixture is used.
Serve the cakes with a dollop of yoghurt and honey.

Sweet Potato with Apricot

Sweet Potato with Apricot

This simple apricot sauce transforms a baked sweet potato into a well-balanced, tasty meal. Easy, quick and utterly delicious!

6 – 8 medium sweet potatoes
250g dried apricots
125ml honey
30ml apple cider vinegar
2,5ml ground ginger
2,5ml ground coriander
a pinch of salt

Preheat your oven to 180℃ and line a baking sheet with baking paper.
Place the sweet potatoes on the baking sheet and bake for about 40 minutes, until soft. Remove from the oven and keep warm.
Turn your oven onto the grill setting.
Add the apricots to a mixing bowl and sprinkle lightly with olive oil. Mix through so that all of the apricots are covered in oil.
Spread out on a baking sheet lined with baking paper and grill until very lightly charred. Keep an eye on them, they burn quickly!
Add half the apricots to a liquidiser.
Add the honey, vinegar, ginger, coriander and a pinch of salt and blitz to a purée.
Taste the sauce and adjust to your liking. Adjust the thickness to your liking by adding more apricots for a thicker sauce.
Make a slit in the baked sweet potatoes and spoon the sauce over it.
Serve on rocket leaves and the rest of the whole roasted apricots.

Orange and Honey Sweet Potato

Orange and Honey Sweet Potato

Whenever I eat this sweet potato dish with honey and orange, I am reminded of the city of Casablanca with its sweet smells and the aroma of cinnamon drifting in the air after another very warm day!!

4 – 6 large sweet potatoes
50g butter
62ml brown sugar
62ml honey
62ml orange juice
the zest of one orange
2,5ml salt
2,5ml ground cinnamon

Preheat your oven to 190℃.
Scrub the sweet potato, cut into chunks and add them to an ovenproof dish.
Add the butter, brown sugar, honey, orange juice, zest, salt and cinnamon to a small saucepan and melt together.
Pour the mixture over the sweet potato chunks and stir through so that all of the potato is covered in the sauce.
Bake in the oven for 30 – 40 minutes or until cooked and slightly charred and the sauce is syrupy.
Serve warm.
