500g steak, cubed or sliced
2 onions, sliced
2 French loaves/baguette
100g butter, softened
2 cloves of garlic, minced
30ml Worcestershire sauce
125ml beef stock
250g provolone/mozzarella cheese, sliced

Preheat your oven to 190℃ and line a baking sheet with aluminium foil or baking paper.
Place a large pan on high heat and add a splash of oil.
Add the cubed steak and fry until browned and caramelised.
Spoon it into a bowl and set aside.
Turn the heat down to medium-high, add some more oil to the pan and fry the onion until just soft.
Spoon the steak back into the pan and add the Worcestershire sauce and stock to it.
Cook, stirring occasionally until the stock has evaporated and the meat and onions are moist and shiny.
Slice the baguette open and place the bottom halves on the baking sheet.
Add the butter and garlic to a bowl and mix together.
Hollow out the bread with your hands and spread the garlic butter over the halves. Set aside.
Take the steak and onions from the heat and spoon it onto the bottom halves.
Now top it with the sliced cheese and place in the oven until the cheese has melted.

Garlic Butter Steak

Garlic Butter Steak

5 cloves of garlic, minced
a handful of parsley, chopped

Place a cast iron pan over high heat, pour in the oil and wait for it to heat up.

Take it from the pan and keep on the side while you repeat the process with the rest of the cubes.
Turn the heat down to medium and add the butter.
Add the garlic to the pan and stir-fry for one minute.
Spoon the meat back into the pan and stir-fry for 2-3 minutes, stirring to coat the meat in the garlic butter.
Sprinkle over the parsley and serve as a main alongside a salad/veg or on a platter with tiny wooden skewers as a canapé.

Beef Tagliata

Beef Tagliata

Tagliata which simply means to cut in Italian, is one of Italy’s most popular steak dishes. I use store bought quartered sun-dried tomatoes for this recipe. The dressing adds a punchy freshness to the meat and is one of the quickest meals you will prepare..

Dressing:
10 quarters of sun dried tomatoes in olive oil, finely chopped
60ml olive oil from the packet of tomatoes
60ml soy sauce
juice of 1 lemon
60ml finely chopped basil leaves

beef fillet/tenderloin
parmesan shavings
a handful of peppery herbs

For the dressing:
Add all the ingredients to a small bowl and stir to mix. Taste and adjust the seasoning with salt and pepper.
Cover the bowl and set it aside at room temperature to develop its flavours. (about 40 minutes)
Cook your steaks in a pan or on the braai/bbq.
Cover with aluminium foil and set aside to rest for 10 minutes.
Slice the cooked meat into strips and arrange it on a serving platter.
Drizzle over the dressing and sprinkle over some parmesan shavings and herbs.
Serve the steak with the rest of the dressing on the side.

Green Peppercorn Sauce

Green Peppercorn Sauce

This peppercorn sauce can obviously be served with any meat of your choice but is really elevated when made in the same pan as the steaks.

80ml brandy
180ml beef stock
125ml cream
45ml canned green peppercorns

Cook your steak in a cast-iron pan, remove the meat but keep the pan on the heat.
Add the brandy to the hot pan.
Turn the heat to medium-high and simmer for a few minutes while scraping down the pan.
Reduce the brandy by half and until you can no longer smell the alcohol.
Pour in the beef stock, bring to a quick simmer and cook until it has also reduced by half.
Turn the heat down to medium and pour in the cream.
Add the peppercorns and cook for 2 minutes.
Taste and season the sauce with salt and a few good grindings of black pepper.
Serve as needed.

BBQ Thyme Fillet

BBQ Thyme Fillet

1 whole beef fillet
125ml thyme leaves
4 cloves of garlic
10ml onion salt or sea salt

Blitz together the thyme, garlic, onion salt, vegetable oil and vinegar with a stick blender. You are looking for a very thick paste. Set aside.
Dry the beef fillet and tie it up.
Rub the herb paste over the fillet.
Cook on a rotisserie over medium-warm coals for 1 hour 15 minutes.
Cover the cooked fillet with aluminium foil and leave to rest for 15 minutes.

Steak Butters

Steak Butters

Flavoured butters are a simply way of adding flavour and punch to meat, easy to make and can be kept in your freezer for when you need it! The Olive Butter is particularly good with chicken, fish and roast vegetables! The method for the three flavoured butters are the same.

Café de Paris Butter:
125g butter
30ml chives, finely chopped
15ml parsley, finely chopped
5ml Dijon Mustard
1 clove of garlic, minced
5ml capers
1 anchovy fillet
the zest of half a lemon, finely grated

Method:
Allow the butter to come to room temperature and soften.
Mix all the ingredients together.
Spread a piece of plastic wrap on a kitchen surface, spoon the mixture on top and roughly shape it into a log shape.
Fold the edge of the plastic wrap closest to you over the log shape and proceed to roll the butter in the plastic so that you have a plastic sausage.
Now take hold of the two ends (the overhanging/extra plastic wrap) and roll the butter away from you on the surface.
Tie the plastic ends and freeze until required.

Olive Butter:
125g butter, softened
190ml olives, chopped
15ml rosemary, chopped
salt to taste

Garlic Butter:
125g butter, softened
3 cloves of garlic, minced
1,2ml salt
1,2ml pepper

300ml beef stock
250ml sour cream

Put a heavy-base pan on high heat and add the butter. If you cooked the steak in a pan, use the same one.
Add the mushrooms and cook until browned and slightly charred on the edges. Remove from the pan.
Turn the heat down to medium and cook the onion until translucent.
Add the garlic and cook for 1 minute while stirring.
Transfer the mushroom back to the pan and sprinkle over the paprika.
Pour the beef stock into the pan and stir with a wooden spoon, scraping loose any charred pieces stuck to the pan. Allow the stock to bubble away until reduced by half.
Take the pan from the heat and stir in the sour cream and parsley.
Season the sauce with salt and pepper.
Place the cooked steaks in the sauce, cover the pan with a lid and allow to stand for 10 minutes before serving.
