Biltong and Fig Camembert Ring

125g cream cheese, room temperature
2 preserved green figs, finely chopped
45ml syrup from the preserved figs
1 x 400g roll of puffed pastry
200g thinly sliced biltong
250g camembert cheese, top rind removed
egg wash: 1 egg yolk and 15ml water whisked together

Preheat your oven to 180℃ and line a baking sheet with baking paper.
Add the cream cheese, chopped figs and the syrup to a bowl and mix to distribute the fig evenly.
Lay the pastry flat on a work surface and halve it in its length – you want to shorter pieces.
Divide the cream cheese mixture between the pastry and spread it out evenly.
Now arrange the biltong on top of the cream cheese.
Cut each piece of pastry into 8 even strips.
Twist each strip like you would when making cheese straws.
Place a saucer/heatproof bowl, more or less the size of the camembert, on the lined baking sheet.
Arrange the twisted pastry around the saucer until you have an entire ring of pastry around it.
Brush the pastry with the egg wash and bake for 15 minutes.
Take the baking sheet from the oven, remove the saucer and replace it with the camembert. (the top with its rind removed, should face up)
Return the baking sheet to the oven and bake for another 8 minutes or so – the cheese should be melted and runny.
Serve warm with fresh herbs scattered over.

Baby Dutch Pancake with Citrus Curd

Baby Dutch Pancake with Citrus Curd

45ml butter, cubed
3 eggs
180ml flour
180ml milk, warmed in the microwave for 30 seconds
15ml sugar
10ml vanilla
a pinch of salt
125ml lemon curd
125g cream cheese, room temperature
2 blood oranges, peeled and cut into segments
icing sugar for dusting

Preheat your oven to 180℃.
Add the cubed butter to a 23cm ovenproof frying pan and place it in the oven to heat up.
Add the eggs, flour, milk, sugar, vanilla and salt to a blender and blitz until smooth.
Remove the hot pan from the oven and swirl the butter around so that it covers the bottom and sides of the pan.
Pour the batter into the pan and bake in the oven for 25 minutes.
Remove the pan and stand on a cooling rack.
Add the lemon curd and cream cheese to a small bowl and mix.
Spoon the mixture onto the warm pancake and spread it out.
Scatter the orange segments over the curd and sift with icing sugar to serve.

Bulgur Wheat Salad

Bulgur Wheat Salad

500ml cooked bulgur wheat
250ml parsley, chopped
1 red onion, finely chopped
80ml chopped pickled cucumber
125ml roasted red peppers, chopped
250ml pomegranate seeds
80ml raisins
Dressing:
60ml olive oil
60ml lemon juice
1 clove of garlic, minced
2,5ml granulated mustard
5ml sugar
2,5ml salt

Add the cooked bulgur wheat, parsley, onion, pickled cucumber, red peppers, pomegranate seeds and raisins to a large mixing bowl and toss together.
Whisk the dressing ingredients together until amalgamated and drizzle over the salad.

Aubergine Flatbread

Aubergine Flatbread

60ml olive oil
1 x 400g can chickpeas, drained
150g – 200g aubergine, cubed
3 cloves of garlic, minced
5ml sumac
lemon juice
pomegranate seeds
8 – 10 small flatbreads, about 8cm diameter

Pour the olive oil in to a pan and set it over medium to medium-high heat.
Add the chickpeas, aubergine cubes, garlic and sumac and cook for about 10 minutes, until the aubergine is soft.
Take from the heat and roughly mash together so that you have mashed chickpeas with texture.
Smear the mixture on to the flatbreads, drizzle with lemon juice and sprinkle over some pomegranate seeds.
Serve as a canapé with drinks.

Bread:
330ml warm water
5ml salt
5ml sugar
10ml instant yeast
750ml bread flour

Filling:
blanched spinach
red onion, sliced
tomato, chopped
grated mozzarella cheese
poached egg
sesame seeds

For the bread:
Add the water, salt, sugar and yeast to the bowl of a stand mixer fitted with the dough hook.
Stir until the sugar has dissolved and leave to stand for 10 minutes.
Add the bread flour and mix on low speed to form a dough.
Turn the speed up to medium and mix/knead for 5 minutes. You will be left with a soft but slightly sticky dough.
Place the dough in a clean, oiled bowl, cover with a clean tea towel and leave to rise for 1-2 hours or until doubled in size.
Preheat your oven to 240℃ and line a baking sheet with baking paper.
Dust a work surface with flour and divide the dough into 6 equal portions.
Roll the dough into a 10cm diameter circle with a rolling pin.
Place the dough rounds on the baking sheet and brush all over with olive oil.
Top the dough with some of the spinach, mozzarella, tomato and red onion, leaving a 1cm border on the outside edge.
Scatter the border of the dough round with sesame seeds and break an egg in the centre.
Bake in the oven for 13 minutes.
Serve warm.

Dough:
330ml warm/tepid water

5ml sugar

750ml bread flour

Filling:
about 350g cooked, ground beef
250ml grated mozzarella cheese
a handful of basil leaves

For the dough:
Add the water, salt, sugar and yeast to the bowl of a stand mixer fitted with a dough hook.
Stir the mixture together until the sugar has dissolved and leave to stand for 10 minutes.
Add the bread flour and mix on low speed to form a dough.
Turn the speed up to medium and mix/knead for 5 minutes. You will be left with a soft but slightly sticky dough.
Place the dough in a clean, oiled bowl, cover with a clean tea towel and leave to rise for 1-2 hours or until doubled in size.
Preheat your oven to 240℃ and line a baking sheet with baking paper.
Dust a work surface with flour and divide the dough into 6 portions.
Roll out each piece of dough to form an oval.
Place the dough ovals on the baking sheet and brush with olive oil.
Top the dough with mozzarella and a few spoons of beef, but keep a 1cm border on the edges.
Fold the edges of the dough over the filling and pinch the ends together to form a boat shape.
Bake for 13 minutes.
Scatter over the basil leaves.
Serve warm or at room temperature.

Cheese Pies

125ml butter
4 eggs, lightly beaten together
250ml grated mozzarella cheese
500g feta cheese, crumbed
12 phyllo pastry sheets

Preheat your oven to 190℃ and line a baking sheet with baking paper.
Add the butter to a bowl and melt it in the microwave oven.
Add the eggs to another bowl and beat together.
Add the grated mozzarella and feta to the eggs and mix together. Set aside.
Now lay one phyllo sheet on a work surface and brush all over with the melted butter.
Lay another sheet on top and brush again.
Spoon 125ml of the cheese mixture evenly across the length of the pastry, about 2cm away from the edge.
Fold the edge over the cheese and roll the pastry into a long log.
Now roll the log into a coil.
Place the coils on your prepared baking sheet and brush with the melted butter.
Bake in the oven for 25 minutes.
Serve the cheese pies with a sweet sauce.

Savoury Scones

Savoury Scones

280g flour
10ml baking powder
2,5ml salt
2,5ml garlic flakes
60ml chives, chopped
100g butter, cubed
1 egg
62ml cream
62ml yoghurt
50g cheese, grated
egg wash: one egg yolk whisked with 15ml water

Preheat your oven to 180℃ and line a baking sheet with baking paper.
Sift the flour, baking powder and salt into a mixing bowl.
Add the garlic flakes and chives and mix through.
Add the cubed butter and rub it into the dry ingredients with your fingertips.
Add the egg, cream, yoghurt and cheese to another bowl and mix to combine.
Add this mixture to the flour mixture and mix with a pallet knife until combined.
Lightly dust a work surface with flour and roll the dough out to a 3-4cm thickness.
Press the scones out with a 6cm biscuit cutter and place them on the prepared baking sheet.
Brush the tops with egg wash and bake in the oven for 15 minutes.
Serve immediately.

Traditional Dutch Doughnuts/Oliebollen

125ml warm/tepid water
2,5ml sugar
15ml instant yeast
4 x 250ml flour
60ml sugar
2 eggs, beaten together
500ml milk, warm/tepid
5ml salt
125ml raisins
vegetable oil for frying
icing sugar for dusting

Add the warm water and sugar to a bowl and stir to dissolve the sugar.
Sprinkle the yeast over and stir again. Leave to stand for 10 – 15 minutes.
Add the flour and 60ml sugar to a very large bowl.
Add the eggs and yeast mixture and whisk together.
Now pour in the warm milk a little at a time, in between whisking. Keep adding milk and whisking until you have a smooth batter.
Cover the batter with a damp tea towel and set aside to rest for 1 hour 30 minutes.
Sprinkle the salt and raisins over the batter and fold it through with a spatula.
Cover the bowl again and rest for another hour.
Heat your oil in a saucepan – about 5cm deep.
Dip two tablespoons in the oil, shape a dough ball and slip it into the oil.
Fry for 2-3 minutes, turning as they cook. Do this in batches so that you don’t crowd the saucepan.
Dust the warm doughnuts with icing sugar and serve warm.


Cheesey Wedges

Cheesey Wedges

Potato
100g butter
200g cheese, grated

Preheat your oven to 180℃.
Slice each potato in quarters and place in a muffin tin. (watch video)
Dot the potato with butter and sprinkle over some salt.
Cover with aluminium foil and bake in the oven for 50 minutes.
Remove the foil, sprinkle some cheese on each potato and bake for another 10 minutes.
Eat immediately!
