Brown Rice Salad

250ml brown rice, cooked according to packet instructions
1 red onion, finely diced
400g cocktail tomatoes, quartered
120g mozzarella cheese, cubed
30g coriander leaves, chopped
30ml pumpkin seeds
30ml sunflower seeds

Dressing:
60ml olive oil
30ml thick, sweet soya sauce
1 clove of garlic, minced

Add the cooked and cooled rice to a large mixing bowl.
Now add the diced onion, tomato and mozzarella and give it a good mix.
Sprinkle over the coriander, pumpkin seeds and sunflower seeds and stir through. Set aside.

For the dressing:
Pour the olive oil and soya sauce into a cup and add the garlic.
Whisk the dressing with a fork until it is amalgamated.
Drizzle over the brown rice salad and give everything a very good mix.
Serve the salad at room temperature.

Whipped Feta Salad

Whipped Feta Salad

200g + 50g feta, crumbled
100ml milk
350g cherry tomatoes, halved
1 small cucumber, diced
a handful of basil, chopped
half an onion, finely chopped
30ml balsamic vinegar
30ml olive oil
20g pine nuts, toasted

Crumble the feta into a blender’s cup and add half the milk.
Blitz with an immersion blender until it becomes emulsified – add the rest of the milk a little at a time, aiming for a creamy consistency that will sit on a plate.
Crumb the 50g feta into the whipped feta and spread on a serving plate.
Add the halved tomatoes, cucumber, basil and onion to a mixing bowl and pour over the balsamic, olive oil and salt and pepper.
Mix together and spoon on to the whipped feta.
Scatter over the toasted pine nuts and a few extra basil leaves.

Tomato and Plum Tart

Tomato and Plum Tart

1 roll butter puff pastry
egg wash: 1 egg and 15ml water beaten together
3 large tomatoes
3 ripe plums
15 thyme leaves
15ml honey
250g flavoured cream cheese (I used chive flavour)

Preheat your oven to 200℃ and line a baking sheet with baking paper.
Lay the pastry on the baking paper and cut a 1,5cm strip off each side.
Brush the pastry with some egg wash and lay the strips onto the pastry border.
Prick the inside of the pastry with a fork and refrigerate for 30 minutes.
Cut the tomatoes and plums into wedges and place in a mixing bowl.
Drizzle with the honey, season with salt and pepper and scatter the thyme leaves over.
Brush the entire pastry sheet with the rest of the egg wash.
Now spread the cream cheese onto the inside block of the pastry, using the back of a spoon.
Arrange half the tomato and plum mix onto the cream cheese.
Bake the tart in the oven for 30 minutes.
Top the warm tart with the remaining tomato and plums and season once more.
Serve slightly warm.
