Prawn Croquettes

Prawn Croquettes

1 onion, finely chopped
2 cloves of garlic, minced
500g prawns, shelled and cleaned
375g mashed potato
125ml grated cheddar cheese
2 eggs
about 500ml panko breadcrumbs
vegetable oil to fry

Place a saucepan over medium-high heat, add a splash of oil and the onion to it and cook until soft.
Add the garlic and stir-fry for one minute.
Add the prawns and cook until pink – about 3 minutes.
Spoon the mixture into a food processor, add 5ml salt and pulse until roughly chopped.
Add the mashed potato and cheddar cheese and pulse until the mixture is incorporated.
Taste and season according to your liking.
Beat the eggs together in a shallow bowl.
Add the breadcrumbs to another shallow bowl.
Scoop 30ml of the prawn mixture into your hands and shape into a log.
Dip the log into the egg and then roll it in the breadcrumbs to cover.
Refrigerate the shaped croquettes for 30 minutes.
Heat the vegetable oil and fry the croquettes in batches for 3-4 minutes at a time.
Serve warm with a tartar sauce on the side.

Roasted Hake with Onions

Roasted Hake with Onions

This recipe is my adaptation to make it easier/quicker/simpler to make Ottolenghi’s Roasted hake with fenugreek onions. The original recipe can be found in his book OTK on page 191.

5ml fennel seeds
5ml mustard seeds
10ml ground cumin
5ml ground turmeric
60ml + 45ml olive oil
40g + 40g + 20g butter, cubed
6 large onions, peeled and sliced
5ml salt
1 green chilli, finely chopped
5ml + 2,5ml sugar
12 hake medallions, unfrozen and dried on kitchen paper
10ml lemon juice
3 lemons cut into wedges

Mix the fennel, mustard, cumin and turmeric together in a small bowl.
Spoon 5ml of this spice mixture out into another small bowl and set both bowls aside.
Place a large pan over medium-high heat and add 60ml olive oil and 40g butter to it.
Wait for the butter to melt before adding the onions and salt.
Turn the heat down and cook for 20 minutes, stirring every now and then.
Add the chopped green chilli and cook for another 2-3 minutes.
Add the 5ml sugar and the spice mix, stir for 30 seconds and remove it from the heat. Set aside.
Preheat your oven to 200℃.
Add the 45ml olive oil, 40g butter, 2,5ml sugar, 5ml spice mix and a pinch of salt to a 24cm x 24cm ceramic dish and mix together in the dish so that it covers the bottom.
Pack the fish tightly into the dish and season with salt and pepper.
Spoon the onion mixture over the fish medallions in an even layer and dot the surface with small pieces of the 20g butter.
Place in the oven and roast for 25 minutes.
Drizzle 10ml lemon juice over the fish and serve with the lemon wedges on the side.

Seafood Bake

Seafood Bake

400g prawns, shelled and deveined
450g hake medallions (hake cut into more or less 3cm x 3cm)
500g seafood and fish mix
60g butter
4 cloves of garlic, minced
125ml white wine
10ml salt
125ml cream
1 lemon, zest grated

Topping:
1 x 200g box of KIPS, Bacon Flavoured Biscuits or any other savoury cracker
30g butter, melted
125ml grated parmesan cheese

Preheat your oven to 200℃ and place all of the seafood in a large oven dish. Flatten/spread out as evenly as possible. Set aside.
Add the butter to a small saucepan set over medium-low heat and allow it to melt.
Add the garlic and stir-fry for one minute.
Add the wine, turn the heat up to high and simmer rapidly until only half the original liquid remains.
Add the salt, a few good grindings of black pepper, the cream and the lemon zest.
Turn the heat down to a low simmer for 30 seconds or so, remove from the heat and pour over the seafood.
Mix through so that the seafood is coated in the sauce.
Place in the oven and cook for 12 minutes.
Crush the biscuits finely and add it to a mixing bowl.
Pour over the melted butter and add the parmesan cheese.
Remove the baking dish from the oven and evenly scatter the mixture over.
Return the seafood to the oven, turn the heat up to 240℃ and bake until golden.
Serve with charred lemon to squeeze over.

Prawn Curry

Prawn Curry

30ml olive oil
15ml turmeric
15ml ground coriander
15ml ground cumin
30ml curry powder
1 kg prawns, shelled and deveined

Curry sauce:
30ml vegetable oil
1 onion, chopped
3 cloves of garlic, minced
1 green chilli, chopped
10ml ground ginger
15ml curry powder
5ml ground cumin
5ml ground turmeric
15ml ground coriander
2 x 400g tins chopped tomatoes
250ml coconut milk

Pour the olive oil into a large mixing bowl and add the turmeric, coriander, cumin and curry powder to it. Mix through.
Add the prawns and stir to cover with the spice paste. Set aside for 30 minutes.
Place a saucepan on medium heat, add the vegetable oil and onion and cook until translucent.
Add the garlic and stir-fry for one minute.
Add the green chilli, ginger, curry, cumin, coriander and turmeric and cook for 30 seconds.
Now blitz the two tins of tomatoes and add it to the saucepan.
Turn down the heat and simmer the mixture for 10 minutes.
Add the marinated prawns, pour in the coconut milk and simmer for another 10 – 15 minutes.
Serve the prawn curry with fresh coriander and steamed rice.

Prawn Paella

Prawn Paella

1 onion, chopped
100g chorizo sausage, chopped
2 cloves garlic, minced
1 sweet pepper, sliced
300g long grain rice
10ml smoked paprika
1,2litre chicken stock
a pinch of saffron
450g uncooked prawns
100g frozen peas
2 lemons

Place a heavy-base saucepan on medium-high heat and add some oil to it.
Add the onion and chorizo and stir-fry for 2-3 minutes.
Add the garlic and sweet pepper and cook for another 2 minutes.
Now add the rice, sprinkle over the paprika and stir to cover.
Add a pinch of saffron to the chicken stock and pour the stock into the saucepan.
Add the prawns, stir through and place a lid on. Cook for about 15 minutes or until most of the liquid has been absorbed and the rice is just tender.
Add the peas and cook for another 6-7 minutes without covering.
Season the paella with salt and lemon juice, taste and adjust the seasoning.
Serve the paella with fresh lemon slices.

2 eggs
about 500ml panko breadcrumbs
vegetable oil to fry

Place a saucepan over medium-high heat, add a splash of cooking oil and the onion and cook until soft.
Add the garlic and stir-fry for one minute.
Add the prawns and cook until pink – about 3 minutes.
Spoon the mixture into a food processor and pulse until roughly chopped.
Add the mashed potato and cheddar and pulse until the mixture is evenly incorporated.
Season with salt.
Beat the eggs together in a shallow bowl.
Add the breadcrumbs to another shallow bowl.
Scoop 30ml of the prawn mixture into you hands and shape it into a log.
Dit into the egg and then roll to cover in the breadcrumbs.
Refrigerate the shaped croquettes for a minimum of 30 minutes.
Heat the vegetable oil and fry in batches for 3-4 minutes.
Serve warm with a tartar sauce on the side.

Fish Parcels

Fish Parcels

4 portions of hake
2 sweet peppers, sliced
100g green olives, pitted
30ml capers, roughly chopped
60ml peppadews, chopped
2 lemons, quartered

Preheat your oven to 200℃.
Cut 4 pieces of baking paper to more or less 30cm x 30cm.
Place a portion of hake in the centre of each paper square and season with salt and pepper.
Add the sweet peppers, olives, capers and peppadews to a small bowl and mix through. Divide the mixture equally and spoon onto the fish.
Squeeze the juice of a quartered lemon over.
Bring the two opposite sides of the paper together and fold over twice.
Now twist the ends to enclose the filling.
Place on a baking sheet and bake for 15 minutes.
Serve the fish in its paper parcel.

Prawn and Basil Salad

Prawn and Basil Salad

500g pasta of your choice
1 x 245g sachet pickled peppers, diced and liquid reserved
500g prawns, deveined
250ml salad cream/creamy mayonnaise
250ml yoghurt
2 big handfuls of basil leaves
half an English cucumber, diced

Cook the pasta according to packet instructions and drain.
Take the pickled peppers from the sachet and chop. Set the peppers aside.
Drizzle the pickling liquid over the warm pasta and stir through. Set aside to cool.
Bring a pot of salted water to the boil, add the prawns and cook for 4 minutes. Drain and set aside to cool.
Add the salad cream, yoghurt and basil leaves to a blender and process until you have a light green dressing.
Season the dressing with salt and pepper.
Add the pasta, prawns, cucumber, peppers and basil dressing to a large bowl and mix through.
Scatter some basil leaves on top and serve.


Clam and Porcini Spaghetti

Clam and Porcini Spaghetti

300g dried spaghetti
1kg clams, washed
60ml white wine
45ml olive oil
45ml butter
250g porcini mushrooms, sliced
1 onion, finely chopped
4 cloves of garlic, minced
10ml dried oregano
2 x 400g tins chopped tomatoes
a large handful of parsley, chopped

Bring 5 litres of water to the boil in a large saucepan with 30ml (8 teaspoons) salt.
Add the spaghetti to the pot of boiling water and cook for 9 minutes.
Heat another large saucepan over a high heat.
Add the clams and the wine, cover with a lid and cook over a high heat until the clams have opened. This should not take longer than 8-10 minutes. Discard any clams that stay closed.
Drain the clams and set aside.
Place a large frying pan over medium-high heat and add the olive oil and butter to it.
Add the sliced porcini and cook for 3 minutes, stirring occasionally.
Add the onion, garlic and oregano and cook for another 3 minutes or so.
Now add the tomatoes as well as the clams and simmer gently for 5 minutes.
Drain the cooked spaghetti and add it to the sauce.
Sprinkle the parsley over and stir through.
Serve immediately.

Crispy Prawn Canapés

Crispy Prawn Canapés

500g prawns, shelled and deveined – keep the tail ends on
2 eggs, lightly beaten
83ml flour
250ml popped rice (rice crispies)
vegetable oil for frying

Clean and dry the prawns.
Add the eggs to a shallow dish and beat together.
Add the flour and popped rice to a second and third bowl.
Heat the oil in a saucepan to about 170℃.
Now dredge each prawn in flour, then egg and finally in the popped rice.
Fry the prawn in the oil for 2-3 minutes.
Serve with a dipping sauce, as a canapé.
