Bacon and Asparagus Potato Salad

Bacon and Asparagus Potato Salad

This salad may be served warm or at room temperature.

Dressing:
half a red onion, finely diced
15ml red wine vinegar
15ml dijon mustard
15ml cold water
45ml olive oil

1kg baby potatoes
200g smoked bacon, chopped into pieces
one small bunch of green asparagus, trimmed and cut into 2cm lengths
1 red onion, sliced
a handful of soft herbs (basil, parsley, sage, chives)

For the dressing:
Add the diced onion, vinegar, mustard and water to a small bowl and mix together.
Gradually add the olive oil, whisking continuously until the mixture thickens.
Taste the dressing and season with salt and pepper.

Cook the potatoes until soft. Drain the water and place in a large mixing bowl.
Cook the bacon in a pan until crispy and then add the asparagus pieces.
Stir-fry on a medium heat for 2-3 minutes.
Pour the bacon, asparagus and pan juices over the potato and mix through.
Add the sliced onion and herbs.
Pour the dressing over while the salad is still warm and mix to serve.

Beetroot Hummus Salad

Beetroot Hummus Salad

1 x 400g tin chickpeas
30ml tahini
2 cloves garlic, minced
15ml lemon juice
5ml salt
150g beetroot, cooked and cubed
5 beets, cooked and sliced about 0.5cm thick
100g feta cheese
50g pistachio nuts, roughly chopped
balsamic vinegar

Drain the chickpeas and add it to a liquidiser.
Add the tahini, garlic, lemon juice, salt and cubed beetroot and blitz until smooth. Set aside.
Arrange the sliced beetroot on a serving plate.
Place dollops of the beetroot hummus on the slices, crumb the feta over and scatter over the pistachio.
Drizzle the salad with balsamic vinegar and serve.

Pear, Date and Walnut Salad

Pear, Date and Walnut Salad

3-4 pears
6-8 dates
50g walnuts
100g gorgonzola/blue cheese, broken up into chunks
150g rocket leaves

Dressing:
half a red onion, very finely chopped
15ml red wine vinegar
15ml Dijon mustard
15ml cold water
45ml olive oil

Slice the pears into 3-4mm thick slices and arrange them on a serving platter, overlapping slightly.
Cut the dates into quarters and scatter evenly over the pears.
Scatter the walnuts over as well as the blue cheese.
Top the salad with the rocket leaves.

For the dressing:
Add the onion, vinegar, mustard and water to a small bowl and whisk together.
Drizzle in the olive oil while whisking continuously until all is incorporated and the dressing is amalgamated.

Dress the salad with the vinaigrette and serve.

Kale and Quinoa Salad

Kale and Quinoa Salad

125ml uncooked quinoa, prepared according to the packet instructions and cooled down
250ml thinly sliced kale
250ml thinly sliced baby spinach
2 red apples, cut into sticks/julienned
100g goat cheese, crumbled
60ml flaked almonds

Dressing:
60ml apple cider vinegar
30ml honey
15ml Dijon mustard
60ml olive oil

Add the quinoa, kale, spinach, apple, goat cheese and almonds to a large salad bowl and set aside.
Add the apple cider vinegar, honey and mustard to a small bowl and drizzle in the oil while whisking continuously.
Pour the dressing over the salad and mix through to serve.

Devilled Egg Pasta Salad

Devilled Egg Pasta Salad

9 eggs, hardboiled
250g small pasta/macaroni
190ml mayonnaise
25ml wholegrain mustard
15ml lemon juice
1 clove of garlic, minced
5ml salt
2,5ml smoked paprika
1 small red onion, finely chopped
2 spring onions, finely sliced

Cook the pasta according to packet instructions. Drain in a colander and rinse under cold water until cool.
Peel the eggs and quarter them.
Separate the whites and yolks in two bowls.
Chop up the whites and set aside.
Set a sieve over a bowl, add the yolks and push them through with the sieve with a wooden spoon.
Add the mayonnaise, mustard, lemon juice, garlic, salt and paprika to the bowl and mix through.
Add the cooled pasta to the bowl and stir through to coat the pasta with the dressing.
Now add the chopped egg whites, red onion and spring onion and mix through.
Serve the pasta as a main or as the perfect side for a picnic, braai or bbq.

Whipped Feta Salad

Whipped Feta Salad

200g + 50g feta, crumbled
100ml milk
350g cherry tomatoes, halved
1 small cucumber, diced
a handful of basil, chopped
half an onion, finely chopped
30ml balsamic vinegar
30ml olive oil
20g pine nuts, toasted

Crumble the feta into a blender’s cup and add half the milk.
Blitz with an immersion blender until it becomes emulsified – add the rest of the milk a little at a time, aiming for a creamy consistency that will sit on a plate.
Crumb the 50g feta into the whipped feta and spread on a serving plate.
Add the halved tomatoes, cucumber, basil and onion to a mixing bowl and pour over the balsamic, olive oil and salt and pepper.
Mix together and spoon on to the whipped feta.
Scatter over the toasted pine nuts and a few extra basil leaves.

Cauliflower and Grain Salad

Cauliflower and Grain Salad

500g cooked grains (choose from or combine barley, quinoa, brown rice)
100g raisins
1 cauliflower head, cut into small florets
10ml ground coriander
2 cloves of garlic, minced
2,5ml chilli flakes
55ml + 75ml olive oil
5ml salt
1 red onion, halved and thinly sliced
30g pistachio nuts, roughly chopped
30g pomegranate seeds
15ml finely grated lemon zest
30ml lemon juice
a small handful of mint leaves
a small handful of parsley

Preheat your oven to 200℃.
Add the raisins to a small bowl and pour 60ml boiling water over it. Set aside.
Add the cauliflower, coriander, garlic, chilli flakes, 55ml olive oil and salt to a mixing bowl and toss together to coat the cauliflower florets.
Tip the florets into a roasting tray and spread it out in a single layer.
Pour 60ml hot water into the now empty mixing bowl, swirl it around to collect any left-behind spices and then pour it around (NOT ON TOP!) the cauliflower.
Cover the tray with aluminium foil and roast for 10 minutes.
Remove the tray from the oven and leave to cool.
Place a pan on medium-high heat, add about 30ml oil and fry the red onion for about 15 minutes, until starting to caramelise.
Add the cooled cauliflower, onion, pistachios, pomegranate, lemon zest, lemon juice, raisins and cooked grains to a mixing bowl.
Drizzle 45ml olive oil over and season with salt. Mix through.
Mix the mint and parsley together on a chopping board and chop roughly.
Add the herbs to the rest of the salad, mix through and serve.

Cucumber Avo Salad

Cucumber Avo Salad

500g cucumber (about half an English cucumber)
2 avocados
30ml lemon juice
2 salad onions, finely sliced
chilli flakes

Peel the cucumber in alternating strips in its length.
Take out the seeds with a teaspoon, cut into bite-sized pieces and put it in a colander set in your sink.
Sprinkle 5ml salt over, toss together and leave to drain for about 20 minutes.
Slice the avocado in half, remove the pip and scoop out the flesh.
Cut in to 1,5cm cubes.
Add the avocado to a mixing bowl, sprinkle over the lemon juice and season with salt and black pepper. Stir to combine.
Shake the cucumber pieces in the colander to get rid of any moisture.
Add to the avocado.
Add the sliced salad onions and mix again.
Now stir the salad vigorously until the avocado breaks down a bit.
Taste the salad and adjust the seasoning with salt, pepper and lemon juice.
Scatter over some chilli flakes and serve.

Melon and Feta Salad (with Basil Dressing)

Melon and Feta Salad (with Basil Dressing)

150ml olive oil
250ml tightly packed basil leaves
1 clove garlic, minced
2,5ml salt
15ml lemon juice
15ml apple cider vinegar

cos lettuce
1 small melon
200g feta cheese
3 tomatoes

For the dressing:
Add all the ingredients to a blender and blitz at high speed for one minute. Set aside.

Arrange some lettuce leaves on a serving platter.
Slice the melon in half and take out the seeds.
Cut the melon into slices and then cut the flesh out of the skin,
Scoop a few melon balls from the flesh if you have a melon scoop.
Arrange the melon on the lettuce.
Slice the feta and tomato into slices and add it to the melon and lettuce.
Drizzle the basil dressing over the salad and serve.
