Jalapēno Cornbread with Honey Glaze

250ml flour
250ml cornmeal/maize meal
60ml sugar
15ml baking powder
2,5ml salt
250ml buttermilk
60g butter, melted
2 eggs
250ml corn kernels
3-4 pickled jalapeno peppers, chopped
125ml grated cheddar cheese

Honey Glaze:
60ml honey
grated zest of 1 lemon
30ml lemon juice

For the cornbread:
Preheat your oven to 190℃ and line a medium loaf tin with baking paper. Set aside.
Add the flour, cornmeal, sugar, baking powder and salt to a mixing bowl and stir to mix.
Pour the buttermilk, melted butter and eggs into another bowl and whisk together.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Add the corn kernels, peppers and cheese and mix to distribute evenly.
Pour the batter into the prepared loaf tin and spread it out evenly.
Bake in the oven for 35 minutes.

For the Honey Glaze:
Add the honey, lemon zest and juice to a bowl and whisk together.

Remove the cornbread from the oven and allow it to cool for 5 minutes.
Remove the bread from the loaf tin and peel away the baking paper.
Drizzle the glaze over the bread and serve warm.

Lemon Chicken Orzo

Lemon Chicken Orzo

5ml salt
2,5ml black pepper
5ml turmeric
5ml smoked paprika

8 skinless chicken breasts
30ml olive oil

1 onion, sliced
3 cloves garlic, minced
5ml Dijon mustard
125ml white wine
250ml orzo
500ml chicken stock
grated zest of one lemon
30ml lemon juice
2,5ml salt
15ml oregano, chopped
15ml parsley, chopped
190ml feta cheese, crumbed
lemon slices

Preheat your oven to 180℃ and spray a 26cm oven dish with cooking spray.
Add the salt, pepper, turmeric and smoked paprika to a small bowl and mix together.
Season the chicken with the spice mix.
Place a non-stick pan over medium-high heat, add the olive oil and then the chicken and cook until browned on both sides.
Remove the chicken and set aside.
Keep the pan on the heat but reduce the heat to medium.
Add the onion and garlic and cook for two minutes.
Add the mustard and wine and scrape up any brown bits from the pan. Reduce by half.
Pour the liquid into the prepared oven dish.
Add the orzo, chicken stock, lemon zest, lemon juice and crumbed feta and stir to mix.
Now lay the chicken pieces on the orzo and push them in slightly.
Bake in the oven for 35 minutes.
Remove and scatter over the oregano and parsley and garnish with lemon slices.
Serve warm.

2 medium onions, finely chopped
250ml finely chopped sweet pepper
500ml chopped smoked chicken viennas (about 7)
500ml grated mature cheddar cheese
a handful of soft herbs (chives, basil, coriander), chopped
6 eggs
60ml cream
2,5ml salt
black pepper

Preheat your oven to 180℃ and spray a 30cm x 20cm ovenproof dish with cooking spray. Set aside.
Add the onion, sweet pepper, Viennas, cheese and herbs to a mixing bowl and mix together.
Add the eggs, cream, salt and a few grindings of pepper to another bowl and whisk together.
Pour the egg mixture into the dry ingredients and mix.
Spoon into the prepared baking dish and bake for 40 minutes.
Serve warm or at room temperature.

Mexican Bowls

Mexican Bowls

1 onion, chopped
3 cloves of garlic, minced
1 sweet pepper, chopped
1 x 400g tin of chopped tomato
1kg minced/ground beef
250ml beef stock
1 x 400g tin of red/black beans
1 chilli, finely chopped

avocado pear, sliced
baby corn
tomato, diced
cos lettuce, quartered

Place a saucepan over medium-high heat, add some olive oil and fry the onions until soft.
Add the garlic and sweet pepper and stir-fry for 2-3 minutes.
Add the chopped tomato, minced beef and stock to the pan and stir through.
Season with salt and pepper and cook over a medium heat until most of the liquid has evaporated.
Drain the beans and add it to the saucepan with the chilli. Cook for another 5 minutes or so while stirring.
Remove from the heat.

Put your bowls together by incorporating:
* the fried minced beef mixture
* avocado pear
*baby corn
* chopped tomato
* lettuce

Serve while the beef is still warm.

Potato-Chorizo Soup

Potato-Chorizo Soup

1 x 200g chorizo sausage, sliced
2 onions, chopped
2 cloves of garlic, minced
800g potato, peeled and cubed
500ml chicken stock
500ml milk
5ml salt
a small handful of parsley

Place a large saucepan on medium heat and add a dash of olive oil and the sliced chorizo.
Cook the sausage for about 5 minutes and then add the onion.
Add the garlic once the onion is soft and stir-fry for 1 minute.
Now add the potato, stock, milk, salt and a few good grindings of black pepper.
Bring to a simmer and cook for 30 minutes, stirring a few times.
Remove the sauce pan from the heat and mash the potato by hand.
Taste the soup and adjust the seasoning.
Sprinkle some parsley on top.
Serve the soup piping hot with fresh bread.

Sticky Pork Chops

Sticky Pork Chops

2 cloves of garlic, minced
60ml tomato sauce
45ml soy sauce
30ml sunflower oil
60ml sugar
10ml Worcestershire sauce
15ml apple cider vinegar
6 – 8 thick pork chops

Preheat your oven to 180℃ and line a roasting tin with baking paper.
Add the garlic, tomato sauce, soy, sunflower oil, sugar, Worcestershire sauce and vinegar to a small saucepan and place over a medium heat. Stir the sauce until the sugar has dissolved.
Turn the heat up and bring the mixture to a boil. Simmer until reduced to a very thick sauce, stirring occasionally. (This should take 10 minutes or so)
Remove the saucepan from the heat and set aside.
Lay the chops in the prepared roasting tin and season with salt and pepper on both sides.
Brush the chops with a generous amount of the sauce and bake in the oven for 15 minutes.
Flip the chops and brush with the remaining sauce.
Return the roasting tin to the oven and bake for a further 15 minutes.
Serve immediately.

Mascarpone Cream Puff

Mascarpone Cream Puff

1 x 400g roll of puff pastry

Royal Icing:
1 egg white
500g icing sugar, sifted

edible flowers

250ml whipping cream
60ml caster sugar
250g mascarpone, room temperature
5ml vanilla
250g fresh raspberries

Preheat your oven to 200℃ and line a baking sheet with baking paper. Cut an extra piece of baking paper of the same size and keep aside.
Lay the pastry on a work surface and cut 7cm diameter circles from it with a biscuit cutter.
Place the pastry circles on the baking sheet, cover with the extra sheet of baking paper and place another baking sheet on top.
Bake for 15 minutes, remove from the oven and set aside to cool.

For the royal icing:
Add the egg white to a mixing bowl and whisk to a froth.
Add the sifted icing sugar one spoonful at a time, stirring really well to incorporate. Keep going: add one spoonful of icing, stir for at least 30 seconds, add another spoonful, etc., until all the icing is incorporated or until you have a very stiff mixture.
Spoon the royal icing into a piping bag fitted with a 4mm nozzle and pipe a border on each of the pastry discs.
Set aside to dry and set.
Add a few drops of water to the royal icing – literally two drops at a time -and stir to thin it down to a very thick but spreadable consistency.
Drop a teaspoonful into each icing border and spread it out with the back of a teaspoon.
Decorate the discs with edible flowers/petals before it sets.
Put aside to dry completely.

Add the whipping cream and caster sugar to a large mixing bowl and whisk until it forms soft peaks.
Add the mascarpone and vanilla and whisk until thick – BE CAREFUL NOT TO OVER-WHIP as the mixture will split.
Add the raspberries to the mascarpone cream and mix through with a wooden spoon, crushing some of the berries to release the juices.

Spoon the mascarpone cream onto a serving plate and place a pastry disc on top to serve.



Curried Eggs

Curried Eggs

8 eggs
60ml vegetable oil
10ml mustard seeds
7 cardamom pods, cracked
5ml fennel seeds
4 cloves of garlic, minced
10ml minced ginger
1 red chilli, finely sliced
2 red onions, chopped
12 curry leaves
30ml ground coriander
10ml chilli powder
5ml turmeric
30ml sugar
15ml salt
1 x 400g tin of chopped tomato
300ml coconut milk
chilli oil, to garnish
coriander leaves

Fill a saucepan with water and place it over high heat. Add the eggs once the water boils and cook for 6 minutes. Plunge the eggs into cold water. Peel and keep on the side.
Pour the vegetable oil into a pan set over medium-high heat and add the mustard seeds. Wait for the seeds to start spluttering.
Add the cardamom, fennel seeds, garlic, ginger, chilli, onions and curry leaves.
Cook for 2-3 minutes.
Now add the coriander, chilli powder, turmeric, sugar and salt and cook for another 2-3 minutes.
Add the tomato and cook on medium heat for 10 minutes, stirring every now and then.
Pour in the coconut milk and taste the sauce – adjust the seasoning to your taste.
Place the eggs in the sauce and heat through.
Serve the eggs on rice with lashings of sauce, a drizzle of chilli oil and fresh coriander leaves.

Sponge on Fruit

It might not be one of the prettiest bakes you will serve but wins all the accolades for simplicity, speed and flavour!!!

250ml sugar
250ml water
250ml blueberries
3 pears, peeled and sliced into 1,5cm chunks
2 apples, peeled and sliced into 1,5cm chunks
45ml brown sugar
5ml ground cinnamon
125g sugar
125g butter, room temperature
2 eggs
125g self-raising flour

Preheat your oven to 180℃ and spray a 20cm x 16cm ceramic dish with cooking spray.
Add the sugar and water to a small saucepan and stir until the sugar has dissolved and the mixture reaches a boil.
Cook for 1 minute without stirring.
Now add the pear and apple chunks and cook over a medium-low heat for 10 minutes.
Remove the fruit from the liquid, spread it in the baking dish and add the blueberries.
Scatter the sugar and cinnamon over the fruits.
Add the sugar and butter to the bowl of a stand mixer fitted with the paddle attachment and cream together on high speed.
Turn the mixer on medium and add the eggs, one at a time. Scrape the bowl down and mix again.
Run the mixer on low speed and add 1-2 tablespoons of flour at a time. Beat to incorporate between each addition.
Spoon the batter on top of the fruit, spread it out evenly and bake for 45 minutes.
Serve the dish warm with ice cream or custard.


Feta-Filled Flatbreads

Feta-Filled Flatbreads

200g self-raising flour
170g greek yoghurt
Filling:
50g baby spinach
50g feta cheese, crumbed
30ml cream cheese, room temperature
1 clove of garlic, minced
a few grindings of black pepper
40ml frozen peas, defrosted
a handful of mint leaves, chopped

Add the flour and yoghurt to a mixing bowl and bring together.
Knead the dough by hand for 5 minutes – you want a soft, bouncy dough. (Add more flour if you have to, but the dough becomes less sticky as you knead it).
Cover with plastic wrap and set aside.
Place the spinach in a bowl and pour boiling water over. Stand for 1 minutes, drain and squeeze the spinach as dry as you can get it, in a tea towel.
Chop it up and add it to a bowl.
Add the feta, cream cheese, garlic, pepper, peas and mint and mix together.
Unwrap the dough and divide it into 4 equal portions.
Make a ball from each portion and then press it into a circle with your fingers.
Spoon a tablespoon full of filling in the centre and then bring in the edges and seal by squeezing it together.
Turn the filled disc over and flatten out with your fingers until about 1,5cm thick.
Set aside and repeat the process with the rest of the dough and filling.
Place a non-stick pan on medium-low heat and add a small knob of butter.
Place the flatbreads in the pan and cook for 4-5 minutes PER SIDE.
Serve warm.
