Prawn Curry

30ml olive oil
15ml turmeric
15ml ground coriander
15ml ground cumin
30ml curry powder
1 kg prawns, shelled and deveined

Curry sauce:
30ml vegetable oil
1 onion, chopped
3 cloves of garlic, minced
1 green chilli, chopped
10ml ground ginger
15ml curry powder
5ml ground cumin
5ml ground turmeric
15ml ground coriander
2 x 400g tins chopped tomatoes
250ml coconut milk

Pour the olive oil into a large mixing bowl and add the turmeric, coriander, cumin and curry powder to it. Mix through.
Add the prawns and stir to cover with the spice paste. Set aside for 30 minutes.
Place a saucepan on medium heat, add the vegetable oil and onion and cook until translucent.
Add the garlic and stir-fry for one minute.
Add the green chilli, ginger, curry, cumin, coriander and turmeric and cook for 30 seconds.
Now blitz the two tins of tomatoes and add it to the saucepan.
Turn down the heat and simmer the mixture for 10 minutes.
Add the marinated prawns, pour in the coconut milk and simmer for another 10 – 15 minutes.
Serve the prawn curry with fresh coriander and steamed rice.

Cottage Potatoes

Cottage Potatoes

6 large potatoes
15ml vegetable oil
500g beef mince (ground beef)
1 onion, chopped
2 cloves of garlic, minced
15ml tomato paste
15ml flour
30ml Worcestershire sauce
250ml beef stock
45ml butter
1,2ml nutmeg

Preheat your oven to 180℃.
Wash the potatoes and bake them in the oven until cooked. Remove and set aside.
Heat the oil in a large saucepan set over medium-high heat.
Add the beef and cook until golden brown and any liquid has evaporated.
Add the onion, garlic and tomato paste and cook for a few minutes while stirring.
Sprinkle with the flour and add the Worcestershire sauce and beef stock.
Bring to the boil while stirring.
Cover, turn the heat down slightly and simmer for 30 minutes. If the mixture becomes too dry, add a little water.
Season the beef with salt and pepper and set aside.
Turn your oven up to 220℃.
Cut the potatoes in half lengthwise and scoop out the flesh, leaving about 0,5cm of potato still stuck to the skin.
Place the potato flesh in a bowl and mash until smooth.
Add the butter and nutmeg and mix through. Season with salt and pepper.
Spoon the mashed potato into a piping bag.
Spoon some of the beef into the hollowed potato and pipe some mashed potato over the beef.
Place the potatoes in a baking dish and bake in the oven until warm and golden on top.
Serve with a fresh salad.


Peanut-Corn Polenta

Peanut-Corn Polenta

2,5ml curry powder
2,5ml turmeric
2,5ml ground ginger
2,5ml onion seeds
2,5ml ground coriander
2,5ml ground cinnamon
83ml peanuts
3-4 corn cobs, kernels shaved off or 350g frozen corn kernels, defrosted
500ml (2x tins) coconut milk
500ml chicken/vegetable stock
2,5ml salt
250ml quick-cook polenta
a handful of parsley, chopped

Place a frying pan on medium heat and add about 45ml vegetable oil to it.
Add the curry powder, turmeric, ginger, onion seeds, coriander and cinnamon and cook while stirring, for about 2 minutes.
Now add the peanuts and stir them around in the spices for about a minute.
Add the corn kernels and stir-fry for another 3 minutes or so. Remove from the heat and set aside.
Pour the coconut milk and chicken stock into a saucepan and bring to a boil.
Add the salt.
Gradually whisk in the polenta, making sure there are no lumps.
Simmer, stirring constantly for about 5 minutes, until thick.
Stir half of the corn kernel mixture into the polenta.
Spoon on to a serving dish, spoon the rest of the corn on top and scatter with parsley.

Flapjacks with Berry Sauce

Flapjacks with Berry Sauce

Makes about 9 flapjacks

For the flapjacks:
62ml sugar
1 egg
125ml milk
15ml butter, melted
250ml flour
10ml baking powder
1ml salt

Add the sugar and egg to the bowl of a stand mixer fitted with the paddle attachment and beat together until creamy.
Add about half the milk and the melted butter and beat to incorporate.
Sift the flour, baking powder and salt and add it to the mixture with the engine running on low.
Gradually drizzle in the rest of the milk so that you are left with a smooth batter.
Place a frying pan on medium-high heat and add a dash of vegetable oil.
Drop spoonfuls of the batter in the pan and fry 1-2 minutes per side.

For the Berry Sauce:
350g frozen berries
62ml sugar
30ml lemon juice

Add the berries, sugar and lemon juice to a small saucepan and place it on a low heat.
Stir the mixture every now and then until the berries are defrosted and the sugar dissolved.
Take the saucepan from the heat and blitz the berry mixture with a stick blender until smooth.
Place the saucepan back onto the heat and bring to a simmer.
Turn the heat down to medium and cook the sauce for 4 minutes.
Decant the sauce into a jug and place in the refrigerator until needed.

Serve the warm flapjacks with the cold berry sauce.
