Passionfruit Cream

600ml milk
80ml caster sugar
3 eggs, separated
6 passionfruits
45ml gelatine powder

Syrup:
125ml caster sugar
pulp of 4 passionfruit

Pour the milk and caster sugar into a small saucepan and set it over medium-high heat.
Stir until the sugar has dissolved and bring the mixture to just under boiling point.
Remove from the heat and set aside.
Add the egg yolks to a heatproof bowl and whisk together.
Drizzle the hot milk mixture into the yolks while whisking continuously.
Place the bowl over a saucepan with simmering water and stir with a wooden spoon for about 7 minutes or so. The mixture is ready when it very lightly coats the back of the wooden spoon.
Remove the bowl from the heat and set aside for a few minutes.
Set a sieve over a bowl and scoop the passionfruit into it. Press down on the seeds to extract the juice.
Stir the juice into the custard mixture and set aside again.
Pour 100ml HOT water into a small bowl and sprinkle over the gelatine. Stir to dissolve.
Add the gelatine mixture to the custard and stir through. Set aside.
Add the egg whites to a clean mixing bowl and whisk to stiff peaks.
Add the whites to the custard and gently fold through.
Divide the mixture between 6 bowls/glasses and refrigerate for one hour, until set.

Syrup:
Pour 125ml water and the 125ml caster sugar into a small saucepan and place over a low heat.
Stir until the sugar has dissolved.
Increase the heat to medium-high and simmer until syrupy – about 3 minutes or so.
Remove from the heat and stir in the passionfruit pulp.
Allow the syrup to cool and refrigerate until cold.

Pour the syrup on the passionfruit cream and serve.

Fluffy Passionfruit Cheesecake

Fluffy Passionfruit Cheesecake

250g cream cheese, room temperature
90g butter, room temperature
120g flour
5 eggs, separated
125ml milk, room temperature
60ml passionfruit pulp
110g caster sugar
icing sugar, to dust

Preheat your oven to 140℃ and line a 22cm cake tin with baking paper. If you are using a loose-bottom tin you have to wrap the bottom and sides with tin foil to waterproof it.
Add the cream cheese and butter to the bowl of a stand mixer fitted with the paddle attachment.
Cream together on a high speed and scrape down in between mixing.
Add the flour and mix on low speed until combined.
Add the egg yolks and mix again.
Drizzle in the milk with the mixer running.
Now do the same with the passionfruit pulp.
Set the mixture aside.
Add the egg whites to a large bowl and whisk to soft peaks.
Add the caster sugar a spoonful at a time until all is incorporated.
Now for the whites into the batter in three batches, with a spatula.
Spoon the batter into the prepared cake tin and place it in a roasting tin.
Pour very hot water into the roasting tin so that it comes 2-3 cm up the sides.
Place in the oven and bake for 90 minutes.
Turn off the oven , open the oven door and stand the cake in the oven for 15 minutes.
Remove the cake from the roasting tin and cool on a cooling rack until warm.
Remove the cheesecake from the tin by inverting it on to a plate.
Remove the baking paper and invert back onto a serving plate.
Leave the cake to cool completely.
Dust the cake with icing sugar and slice to serve.


Passionfruit Soufflé

Passionfruit Soufflé

about 30g butter, melted – to brush the ramekins
2 egg yolks
90g + 90g caster sugar +extra for the ramekins
5 egg whites
350-375ml of passion fruit pulp (about 25 fruits if you are using fresh)
icing sugar, for dusting

Preheat your oven to 220℃. Brush 6 x 180ml ramekins with melted butter, dust them with caster sugar (bottom and sides) and place them on a baking sheet.
Add the egg yolks and 90g caster sugar to a large mixing bowl and beat with an electric whisk for at least 5 minutes. The mixture should be pale and thick and hold a trail when the beaters are lifted.
Add the egg whites to another large bowl and whisk until soft peaks.
Gradually add the remaining 90g caster sugar, one spoonful at a time while beating.
Place a sieve over a bowl, add the 350ml passionfruit and gently stir so that the pulp and juice runs through and the seeds stay behind. Reserve the pulp/juice as well as the seeds.
Add 80ml of the pulp/juice to the egg yolk mixture and mix well.
Stir a third of the egg whites into the mixture and then gently fold in the remaining whites.
Fill the ramekins almost to the top with the soufflé mixture and run you thumb around the edge to lift the mixture away from the rim.
Place in the oven and bake for 12 minutes.
Dust the soufflés with icing sugar and serve with the pulp and some seeds mixed through.

Quick-Bake Passionfruit Tart

Quick-Bake Passionfruit Tart

This tart is makes for the perfect summer dessert when served with a scoop of ice cream and extra passionfruit pulp drizzled on top. It is so easy to make, you only need to take out a mixing bowl and a whisk!!

4 eggs
250ml milk
5ml vanilla
125g butter, melted
250ml caster sugar
125ml passionfruit pulp and extra for drizzling once you serve
125ml flour
250ml desiccated coconut

Preheat your oven to 170℃ and spray a 24cm tart tin with cooking spray.
Add the eggs, milk, vanilla, butter, sugar, passionfruit pulp, flour and coconut to a mixing bowl and whisk together.
Pour the batter into the prepared tin and bake for 50 minutes.
Cool the tart for 10 minutes before refrigerating for at least 2 hours.
Dust with icing sugar and drizzle with passionfruit pulp.
