Oven Pumpkin Risotto

This oven risotto is one of the very best dinners you will make. It is low effort and easy cooking with delicious taste rewards. NB: do not substitute the pumpkin with butternut!!!

30ml vegetable oil
30ml butter
150g smoked bacon, diced
1 large onion, finely diced
1 clove of garlic, minced
250ml arborio rice
625ml chicken stock
60g butter, diced
500g pumpkin, peeled and diced (1cm x 1cm)
125ml grated parmesan cheese
15ml parsley, chopped

Preheat your oven to 190℃.
Place an ovenproof saucepan on medium-high heat, add the oil and butter and add the bacon.
Fry until cooked and starting to turn crispy.
Remove the bacon with a slotted spoon, leaving behind the fat.
Add the onion to the saucepan and cook until soft and translucent.
Add the garlic and stir-fry for 1 minute. Turn off the heat.
Add the rice, stock, 60g butter, pumpkin and cooked bacon to the saucepan and stir together.
Cover with a lid/aluminium foil and bake for 45 minutes, until the rice is soft.
Remove from the oven and stir in the parmesan.
Taste and season with salt and pepper.|Sprinkle over the parsley and serve.

Honey Glazed Pork Chops

Honey Glazed Pork Chops

6 pork chops
22,5ml soy sauce
30ml oyster sauce
5ml ground ginger
30ml honey
25ml five-spice powder
45ml wine (or water or stock)

Add all the ingredients, except the pork chops, to a mixing bowl and whisk together.
Place the chops in a shallow baking dish and pour the mixture over.
Leave to marinate for one hour, turning the chops once.

Preheat your oven to 180℃.
Place a cast-iron pan (or any other oven-friendly pan) on high heat, and pour in some vegetable oil.
Scrape most of the marinade off the meat and fry for 2 minutes before turning and frying another 2 minutes.
Turn the heat down to medium and pour in the marinade sauce.
Stir and cook for about 3-4 minutes and then place the pan in the oven and cook for 20 minutes.
Serve the chops with fragrant rice or couscous.

Green Spaghetti

Green Spaghetti

This is a recipe from the brand new book “Cook it. Eat it. Live it.” by Jo Kenny. I was lucky enough to write a review on the book and simply cannot have enough of this delicious pasta dish! I have made a vegetarian version of Jo’s original Pea and Smoked Bacon Spaghetti.

120g spaghetti
100g smoked bacon lardons (or leave it out for a meat-free meal)
200g peas
a large bunch of fresh basil
30ml olive oil
2 cloves garlic, minced
30ml créme fraîche
20g parmesan cheese
zest of one lemon

Add the spaghetti to a large pot with boiling water and allow to cook until al-dente.
Heat a large frying pan on medium heat and cook the bacon lardons for 5 minutes.
Add the peas, basil, olive oil and garlic to a food processor, season with salt and blend until the mixture forms a smooth paste.
Add the pea and basil paste to the pan on a low heat.
Add the creme fraîche and stir on a low heat to warm through.
Drain the pasta and add it to the pan immediately.
Stir the pasta through the sauce so that is coated evenly.
Serve the pasta with the grated parmesan cheese, lemon zest and another squeeze of lemon juice.

Sweet-and-Sour Pork Chops

Sweet-and-Sour Pork Chops

These pork chops are so easy to make and really delivers on taste! Serve them on noodles, rice or mashed potato.

83ml sugar
83ml apple cider vinegar
45ml pineapple juice (from the canned pineapple)
45ml tomato sauce (ketchup)
5ml Worcestershire sauce
15ml soy sauce
20ml cornstarch
125ml water

1 onion, sliced
2 cloves of garlic, minced
15ml fresh ginger, grated
half each of a red, green and yellow bell/sweet pepper, sliced
1 tin of pineapple pieces

6 pork chops

Preheat your oven to 180℃.
Add the sugar, vinegar, pineapple juice, tomato sauce, Worcestershire sauce, soy and cornstarch to a mixing bowl and stir to mix together.
Add the water, stir through and set aside.

Put a cast-iron pan (skillet) on medium heat and add a dash of vegetable oil.
Add the onion, garlic, ginger and sweet pepper and fry for 4 -5 minutes.
Add the pineapple pieces and pour the sauce into the pan with the onion mixture.
Reduce the heat and gently simmer for 5 minutes.

Warm another pan on medium-high heat and brown the chops, about 2-3 minutes per side.
Immediately place the fried pork chops in the sauce. Keep going until you have browned all the chops.
Cover the pan with the chops and the sauce and place in the oven for 25 minutes.
Scatter some sesame seeds and coriander leaves over before serving on rice, noodles or mashed potato.

Meatballs cooked in Tomato Sauce

Meatballs cooked in Tomato Sauce

There is no pan frying involved in making these meatballs as they are cooked directly in the tomato sauce and therefore are wonderfully juicy and aromatic. The recipe yields about 16 large meatballs but may be easily halved.

2 onions, chopped
4 cloves of garlic, minced
2 tins of chopped tomato
15ml sugar
10ml salt
10ml dried oregano
250ml beef stock


2 slices bread
62ml milk
1kg beef mince
10ml salt
250ml mozzarella cheese, grated
125ml parmesan cheese, grated

Preheat your oven to 190℃.

Add the onion, garlic and a splash of oil to an ovenproof saucepan and place on medium heat. Cook for about 5 minutes, stirring occasionally.
Add the chopped tomato, sugar, salt, oregano and stock and allow the mixture to simmer slowly while you get on with the meatballs.

Slice the crusts from the bread and place it in a bowl.
Pour the milk onto the bread, turning the bread in the milk so that it becomes soggy and start falling apart.
Add the beef and salt to the bread mixture and mix with your hands. Push your hand down into the minced meat and squeeze it through your fingers – repeat until the ingredients are evenly distributed.

Scoop a tablespoon-full of the meat mixture into your hands and roll into a ball. Place the meatball directly into the slowly simmering tomato sauce.
Keep going until you have no meat mixture left.
Sprinkle the grated cheeses onto the meatballs and bake in your preheated oven for 30 minutes.
Serve with a crusty bread or fluffy mashed potato.
