Zucchini Cheese Pie

500g zucchini, grated
200g feta cheese, crumbed
100g mozzarella, grated
25ml dill, chopped
15ml sliced spring onions
2 eggs
5-6 sheets filo pastry
50g butter, melted

Preheat your oven to 180℃.
Grate the zucchini into a bowl, sprinkle with salt and set aside for 20 min.
Scoop the zucchini into a clean dish towel and twist it as though you are wringing it out, to get rid of the water/moisture.
Add the zucchini, feta and mozzarella to a bowl and mix together.
Add the dill, spring onion and egg and mix thoroughly. Set aside.

Melt the butter and brush a 23cm diameter pie dish on the bottom and sides.
Lay a sheet of filo in the pie dish, allowing it to hang over the sides and brush that with butter as well.
Lay another 4-5 sheets of filo over the first one, overlapping them at different angles and brushing each with the butter.
Spoon the zucchini and cheese mixture into the filo.
Fold the pastry in and around the filling and once brush with the butter.
Bake the pie in the oven for 40 minutes or until the crust is golden brown.
Serve the pie warm or at room temperature.

Aubergine Frikadelle/”Meatballs”

Aubergine Frikadelle/”Meatballs”

250ml uncooked lentils
1 onion, chopped
2 large aubergines, cut into small dice
4 cloves of garlic, minced
15ml chopped parsley
200g white bread (about 5 slices)
30g parmesan cheese, grated
10ml salt
2 x 400g tins chopped tomato
5ml salt
45ml sugar
30ml Worcestershire sauce
a handful of basil leaves, chopped

Cook the lentils according to packet instructions, drain and set aside to cool.
Preheat your oven to 200℃ and line a baking sheet with baking paper.
Place a saucepan on medium heat and add some olive oil to it.
Add the chopped onion and cook until soft.
Add the diced aubergine, a pinch of salt and another drizzle of olive and stir-fry until really soft.
Add the garlic and cook for another minute.
Take the mixture from the heat and allow to cool slightly.
Break the bread into chunks and add it to a food processor. Whizz to crumbs.
Remove 125ml of the crumbs and set aside. Pour the rest of the crumbs into a large mixing bowl.
Add the aubergine mixture, lentils, parmesan, parsley, salt and a few grindings of black pepper to the food processor and whizz to a paste.
Taste the mixture and adjust the seasoning.
Roll into 18-22 balls, place on the prepared baking sheet and drizzle with some olive oil.
Bake in the oven for 40 minutes until crisp.
Add the chopped tomato to a saucepan and add the salt, sugar and Worcestershire sauce.
Simmer until reduced – about 15 minutes.
Turn your oven onto the grill setting.
Pour the tomato sauce into an ovenproof dish, place the aubergine balls on top and sprinkle over the reserved bread crumbs.
Drizzle with olive oil and grill in the oven for 5 minutes.
Sprinkle over the chopped basil and serve on steamed rice.



Mediterranean Orzo

Mediterranean Orzo

200g chorizo sausage
30ml olive oil
1 onion, chopped
2 cloves garlic, minced
1 x 400g tin of whole cherry tomato
10ml sugar
5ml salt
400g orzo pasta
400ml vegetable stock
a handful of basil leaves, chopped
parmesan cheese

Place a large pan on medium-high heat and add the olive oil and onion to it.
Fry the onion until just soft.
Add the garlic and stir-fry for one minute.
Add the tomatoes, sugar, salt and a few grindings of black pepper.
Cook for 5 minutes or so, stirring every now and then.
Add the orzo and stir through.
Pour in the vegetable stock and cook for about 10 minutes. The liquid has to reduce and the orzo should be tender when you taste it.
Scatter over three quarters of the basil and turn off the heat.
Stir through and serve with grated parmesan cheese and the rest of the basil scattered over.

Gnocchi-Noodle Mushrooms

Gnocchi-Noodle Mushrooms

Not quite gnocchi but also not quite noodle…. You will need a clean wine or beer bottle to shape the noodles into a mushroom shape. The top must be clean and dry.

400g potato, peeled and cubed
120g cornflour (or potato flour)
5ml salt
80ml chives, very finely chopped
30ml butter
200g mushrooms, finely chopped
1 onion, finely chopped
45ml salad onion, finely chopped
15ml thyme leaves

Cook the potato in salted water until very soft.
Drain, add the potato back into the hot saucepan and place over a medium-high heat. Stir around for a minute or two until the potato is dry and there are no trace of water.
Take off the heat and mash to a fine texture.
Add the cornflour, salt and chives and mix through.
Knead/squeesh the ingredients together until it forms a dough. If you REALLY can’t bring it together, add a few drops of water and knead again.
Scoop up about 15ml of the dough and squeeze/roll into a ball shape.
Press the dough balls into the top of a dry wine bottle and carefully lift it off. Put aside and continue shaping the rest of the dough.
Fill a saucepan with water, bring to the boil and then turn it down to a simmer.
Add the gnocchi to the water and simmer for 4 minutes – they will float once they are done.
Remove and drain. Set aside.
Add the butter to a pan set over medium-high heat.
Add the mushroom, onion and salad onion and cook for about 5 minutes.
Scatter in the thyme leaves and add the gnocchi-noodles.
Reduce the heat to medium and stir-fry for 3 minutes until the noodles are warmed through.
Serve immediately.

Mushroom Polenta with Gremolata

Mushroom Polenta with Gremolata

Gremolata:
62ml pine nuts (you may replace with sunflower seeds)
a big bunch of parsley
2 cloves garlic, peeled
the zest of 1 lemon
a pinch of salt
the juice of 1 lemon
45ml olive oil

Polenta:
750ml vegetable/chicken stock
5ml salt
250ml quick cooking polenta
62ml butter

Mushrooms:
45ml butter
30ml sunflower oil
500g mixed mushrooms, roughly chopped
15ml thyme leaves
salt and pepper

For the Gremolata:
Place a large frying pan on medium heat and add the pine nuts to it.
Shake the pan over the heat or stir the seeds around with a spoon, until it starts to toast and change colour.
Remove the seeds from the pan and set aside.
Place the garlic, parsley and half the pine nuts on a chopping board and mince together until finely chopped.
Add the lemon zest and a pinch of salt and chop the ingredients together.
Scrape the chopped ingredients into a small bowl and add the rest of the pine nuts to it.
Now add the lemon juice and olive oil and stir together. Set aside.

For the Polenta:
Add the stock and salt to a saucepan set over high heat and bring the stock to a boil.
Add the polenta and whisk the mixture together until it has thickened.
Take the saucepan from the heat, add the butter and whisk well. Set aside.

For the Mushrooms:
Add the butter and oil to a frying pan set over high heat.
Add the mushrooms, thyme, salt and pepper and cook for about 5 minutes.
Remove from the heat.

Spoon the polenta into bowls and top with mushrooms and a spoonful of gremolata.
