Spelt Salad

250ml spelt
250ml fresh tomato, chopped
250ml cucumber, chopped
250ml marinated sweet peppers, chopped
a handful of sprouts

Lemon Dressing:
62ml lemon juice
1 clove of garlic, minced
5ml dijon/wholegrain mustard
1,2ml salt
ground black pepper
7,5ml honey
62ml olive oil

Cook the spelt according to the instructions on the packet and set aside to cool.
Add the spelt, tomato, cucumber, peppers and sprouts to a large mixing bowl.
Add the lemon juice, garlic, mustard, salt, a few grindings of black pepper and honey to a small mixing bowl and whisk together.
Slowly drizzle in the olive oil while whisking continuously. Keep going until all the oil is incorporated and you have an emulsified mixture.
Pour about half of the lemon dressing over the salad and mix through.
The rest of the lemon dressing may be kept in the refrigerator.

Quinoa Peach Salad

Quinoa Peach Salad

This salad is literally a complete protein meal, can be made in advance (only get better) and is fabulous for picnics or lunch boxes!

250ml uncooked quinoa
250ml pickled sweet peppers (store bought or homemade)
125ml feta cheese, crumbed
5 peaches, cubed
2 handful of basil leaves, chopped

Cook the quinoa according to the packet instructions and allow to cool completely.
Dice the sweet peppers, feta and peaches and chop the basil leaves.
Mix everything together.
Drizzle the pickling liquid from the sweet pepper over the salad or make the Lemon Dressing (search on this blog)

Serve as a side or a complete meal.

Quinoa Salad

Quinoa is an ancient grain that is a complete protein and has a deliciously nutty flavour. This salad offers all the nutrients you need for a meal on its own or as a side dish to whatever else you are cooking.

45ml olive oil
30ml lemon juice

375ml quinoa, cooked according to the packet instructions
250ml tightly packed sun-dried tomatoes, chopped
half a red onion, finely chopped
125ml feta cheese, crumbed
1 apple, chopped into small cubes
a small bunch of chives or any other soft, fresh herbs, chopped

Whisk the olive oil and lemon juice together and set aside.
Add all the other ingredients to a bowl and mix through.
Drizzle the olive oil mixture over the salad and serve.
