Bea’s Guava Crumble

3 x 410g tins of guava halves
100ml brown sugar
5ml ground cinnamon
125ml cream

Crumble:
250ml flour
125ml brown sugar
120g butter, cut into small cubes
125ml chopped nuts
80ml oats

Preheat your oven to 180℃ and lightly spray a 28cm x 24cm oven dish with cooking spray.
Drain the guava halves and arrange them in a single layer in the oven dish.
Drizzle the cream over.
Add the brown sugar and ground cinnamon to a small bowl and mix together.
Sprinkle over the guavas and set aside.
Add the flour, brown sugar, butter, chopped nuts and oats to a mixing bowl.
Rub the ingredients together with your fingertips until you have a lumpy mixture with the consistency of wet sand.
Scatter the crumble over the guavas and bake for 30 minutes until golden brown and crunchy.
Serve the guava crumble with custard.

Chicken and Guava Curry

Chicken and Guava Curry

6 chicken breasts, cut into chunks
2 + 3 guavas, quartered and deseeded
500ml yoghurt
45ml vegetable oil
5ml mustard seeds
5ml cumin seeds
4 curry leaves
10ml ground coriander
5ml chilli flakes
5ml ground turmeric
5ml salt
10ml sugar

Add the two quartered guavas and 500ml yoghurt to a blender and blitz until smooth. Set aside.
Add the vegetable oil to a saucepan set over medium heat.
Add the mustard and cumin seeds and wait for it to start crackling.
Now add the curry leaves, coriander, chilli, turmeric, salt and sugar.
Pour in the guava and yoghurt mixture and add the chicken pieces.
Turn the heat down to medium and simmer for 30 minutes.
Add the three quartered and deseeded guavas and stir through.
Simmer lightly for another 10 minutes.
Serve the curry on fragrant rice.

Guava Breakfast Bowl

Guava Breakfast Bowl

about 500g guavas, peeled
500g sugar
granola/muesli
vanilla yoghurt

Add the sugar and 2 litres of water to a large saucepan, set over medium-high heat and stir until the sugar has dissolved.
Add the guavas, wait for the water to come to a boil and then turn dow the heat to a low simmer.
Cook for about 30 minutes.
Turn the heat off and leave the guavas in the liquid to steep overnight.
Remove the fruit from the liquid and slice into o,5cm thick slices.
Now layer granola, yoghurt and guava in a glass.
