Roasted Strawberries

Roasted Strawberries

400g strawberries, hulled and halved
45ml balsamic vinegar
45ml water
30ml lemon juice
2,5ml ground black pepper
60ml + 60ml icing sugar
500g greek yoghurt
grated zest of 1 lemon
60ml mint leaves, chopped

Preheat your oven to 200℃.
Add the strawberries to an ovenproof dish.
Drizzle the balsamic vinegar and lemon juice over and pour the water into the dish.
Now sprinkle over the black pepper, icing sugar and a pinch of salt.
Roast in the oven for 20 minutes, tossing after 10 minutes, until soft and bubbling.
Allow to cool to room temperature.
Pour the roasting liquid into a small bowl.
Add the yoghurt and lemon zest to a bowl and mix together.
Now drizzle about 45ml of the roasting liquid over the yoghurt and fold through to create a ripple.
Spoon the yoghurt on to a serving plate and spoon the strawberries on top.
Drizzle over some of the roasting juices and scatter over the mint leaves to serve.


Pineapple Brulée

Pineapple Brulée

2 pineapples
40g cornflour
50ml + 450ml milk
4 egg yolks
50g + 50g caster sugar
5ml vanilla
100ml granulated sugar

Halve the pineapples in their length.
Cut a 1cm border from the edge with a small sharp knife.
Scoop out the flesh with a melon baller or a teaspoon, taking care not to break the skin.
Chop the flesh into small pieces and keep aside.
Add the cornflour to a large mixing bowl and stir in the 50ml milk.
Add the egg yolks and 50g caster sugar and whisk together. Set aside.
Pour the 450ml milk into a small saucepan and add the other 50g caster sugar to it.
Place the saucepan over medium heat and stir until the sugar has dissolved.
Take it from the heat as tiny bubbles start too appear around the edges of the saucepan.
Drizzle the warm milk mixture into the egg mixture while whisking constantly.
Now pour the mixture back into the saucepan and place it on medium-low heat.
Stir continuously until thickened.
Allow to cook for 30 seconds before removing it from the heat.
Add the vanilla and stir through.
Pour the mixture onto a dinner plate and place plastic wrap directly on the surface.
Allow to cool completely.
Add the pineapple flesh, stir through and spoon the mixture into the pineapple.
Sprinkle about 25ml sugar over each pineapple and brulée with a blowtorch.
Serve the pineapple cold.


Banana Cake

Banana Cake

4 + 3 ripe bananas
125ml yoghurt
2 eggs
250ml sugar
2,5ml ground cinnamon
5ml vanilla
a pinch of salt
500ml flour
15ml baking powder
150g butter, melted
160g sugar
30ml water

Preheat your oven to 180℃ and line a 20cm x 20cm baking tin with baking paper.
Peel 4 bananas and halve them in their length.
Arrange cut-side down in the prepared baking tin and set aside.
Peel the other 3 bananas and mash them with a fork.
Add to a bowl with the yoghurt, eggs, sugar, cinnamon, vanilla and salt.
Mix together.
Sift in the flour and baking powder and mix together until smooth. The mixture will be very stiff.
Add the melted butter and mix again until all of the butter has been absorbed into the batter. Set aside.
Add the 160g sugar and 30ml water to a small saucepan set over medium-high heat.
Stir until the sugar has dissolved.
Simmer the mixture WITHOUT STIRRING until it turns a caramel colour.
Remove from the heat and pour it over the bananas in the prepared baking tin.
Now pour the batter into the tin and spread it out evenly.
Place in the oven and bake for 35 minutes.
Remove the cake and cool in the baking tin for 15 minutes.
Invert the cake on to a serving plate and cut into squares to serve.

Raspberry Cups

Raspberry Cups

12 shortbread biscuits
250ml cream
5ml rose water
12 squares of Turkish delight, chopped into small pieces
1 punnet fresh raspberries
a small bunch of mint leaves, finely chopped
icing sugar

Line up 6 small glasses.
Crush the shortbread biscuits roughly and place in a bowl.
Pour the cream in to a mixing bowl and add the rose water.
Whisk until medium-stiff peaks.
Spoon some of the biscuit into the glasses and add 2 spoonful of cream.
Top with a few raspberries and scatter some of the chopped Turkish delight and mint leaves over.
Repeat the layers once more.
Sift the icing sugar over the cups to serve.

Sponge on Fruit

It might not be one of the prettiest bakes you will serve but wins all the accolades for simplicity, speed and flavour!!!

250ml sugar
250ml water
250ml blueberries
3 pears, peeled and sliced into 1,5cm chunks
2 apples, peeled and sliced into 1,5cm chunks
45ml brown sugar
5ml ground cinnamon
125g sugar
125g butter, room temperature
2 eggs
125g self-raising flour

Preheat your oven to 180℃ and spray a 20cm x 16cm ceramic dish with cooking spray.
Add the sugar and water to a small saucepan and stir until the sugar has dissolved and the mixture reaches a boil.
Cook for 1 minute without stirring.
Now add the pear and apple chunks and cook over a medium-low heat for 10 minutes.
Remove the fruit from the liquid, spread it in the baking dish and add the blueberries.
Scatter the sugar and cinnamon over the fruits.
Add the sugar and butter to the bowl of a stand mixer fitted with the paddle attachment and cream together on high speed.
Turn the mixer on medium and add the eggs, one at a time. Scrape the bowl down and mix again.
Run the mixer on low speed and add 1-2 tablespoons of flour at a time. Beat to incorporate between each addition.
Spoon the batter on top of the fruit, spread it out evenly and bake for 45 minutes.
Serve the dish warm with ice cream or custard.


Candied Orange Slices

Candied Orange Slices

2 oranges, sliced about 4-5mm thick
125ml water
125ml sugar
2 cardamom pods

Pour the water, sugar and cardamom pods into a small saucepan set over medium-high heat.
Stir the mixture until the sugar has dissolved.
Now add the orange slices, bring to a simmer and cook for 45 minutes.
Place the orange in a glass container and pour the syrup over.
Serve with ice cream, citrus desserts, sponge cake and roast chicken or duck.

Puff-Baked Apples

Puff-Baked Apples

1 x 400g Today Puff Pastry
2 large apples
egg-wash: egg yolk + 15ml water whisked together

Preheat your oven to 200℃ and line a baking sheet with baking paper.
Unroll your pastry and divide and cut it into 8 equal squares.
Place 4 squares on the prepared baking tray and set aside.
Make 0,5cm incisions in a vertical line on the other pastry squares.
Fill the squares with these incisions following a “brick-laying” pattern.
Peel, halve and core the apples.
Place half an apple on a square on the baking sheet and cover with a square with incisions.
Press down to seal and trim off the excess pastry.
Brush with egg-wash and repeat with the rest of the squares and apple.
Bake in the oven for 20 minutes and serve with custard.

Traditional Clafoutis

Traditional Clafoutis

125ml sugar
125ml flour
3 eggs
5ml vanilla
30ml butter, melted
250ml milk
enough pitted cherries to cover the bottom of a pie/flan dish

Preheat your oven to 180℃ and grease a ceramic pie/flan dish.
Add the sugar and flour to a mixing bowl.
Whisk the eggs, vanilla, melted butter and milk together in a wide-mouth jug.
Slowly pour the milk mixture into the dry ingredients while whisking.
Fill the bottom of the pie dish with an even layer of cherries and pour the batter over the cherries.
Bake in the oven for 40 minutes.
The clafoutis will puff up in the oven and fall back on itself as it cools.
Dust with icing sugar once cooled.

Peach and Bacon Toastie

Peach and Bacon Toastie

This makes a snack for 1 person.

3 slices bread, I prefer ciabatta
1 packet streaky bacon
2 ripe peaches
45ml tahini/sesame paste, thinned down with a few drops of olive oil

Preheat your oven to 190℃.
Place the sliced bread on a baking sheet and give it a light drizzle of olive oil.
Lay the bacon strips on another baking tray.
Place both trays in the oven until (1) the bread is toasted and (2) the bacon is done.
Remove the pip from the peaches and cut each half into slices. Set aside.
Mix the tahini with a few drops of olive oil so that it is thinned down and can be drizzled.
Place a slice of toast on a plate and drizzle with the tahini.
Arrange a layer of bacon on each slice and top that with a few slices of the peach.
Sit somewhere peaceful and enjoy every single bite!

Fruit Salad

1 x container ready-made vanilla custard

Peel the papino and cut it in half. Slice a small section away on the rounded side so that it forms a base on which the fruit can “stand”.
Place the half on a serving dish and fill the cavity with the berries and a generous dollop of custard!!
