Potato Flatbread / Schiacciata di Patate

5-6 large potatoes
410ml flour
310ml cold water
30ml olive oil
2,5ml salt
160ml grated parmesan cheese
15ml chopped rosemary

Preheat your oven to 200℃ and line a large baking sheet with baking paper. Set aside.
Slice the potato thinly and set aside.
Add the flour to a mixing bowl and whisk in the water, olive oil, salt and grated parmesan.
Whisk the batter by hand for a minute or two, until smooth.
Add the sliced potato to the batter and mix it through by hand, making sure that the slices are coated with batter.
Place hand-full potato slices on the prepared baking sheet and spread it out in an evenly layer with the potato overlapping.
Scatter over the chopped rosemary and some extra grated parmesan cheese.
Bake the flatbread for 40 minutes.
Remove from the oven, slice into pieces and serve hot.

Filled Focaccia

Filled Focaccia

500g flour
10g instant yeast
340ml lukewarm water
10ml sugar
10ml salt
20ml olive oil
Chaloner olive crisp
olives
olive oil
6-7 sprigs of fresh rosemary

Pour the lukewarm water into a jug and sprinkle the yeast over.
Add the sugar, salt and olive oil and stir the mixture for 30 seconds.
Add the flour to the bowl of a stand mixer fitted with the dough hook.
Turn the mixer on to a low speed and pour in the yeast mixture.
Once the mixture comes together as a dough, turn the mixer to medium speed and knead for 4 minutes. until you have a smooth, elastic dough.
Lightly oil a clean mixing bowl and place the dough in it. Cover with a damp cloth and leave to prove for an hour or until doubled in size.
Preheat your oven to 180℃.
Knock the dough back by kneading it by hand for 2 minutes.
Divide the dough into two equal pieces and roll each into a circle of more-or-less the same size.
Push the tips of your fingers into the circles so that it forms indents in the dough.
Drizzle some chilli crisp over the dough and dot it with olives.
Place one disc on top of the other and then place it on a baking sheet lined with baking paper.
Stick the rosemary sprigs into the focaccia and drizzle generously with olive oil.
Cover the bread loosely with a kitchen towel and set aside for 15 minutes.
Bake the focaccia in the oven for 25 minutes.

Honey Baked Quince

Honey Baked Quince

600ml water
100g honey
250g brown sugar
1 lemon
4 quince

Preheat your oven to 150℃.
Add the water, honey and brown sugar to a small saucepan.
Cut the zest from the lemon, add the strips and place the saucepan over a gentle heat.
Stir until the sugar has dissolved, bring to a boil and simmer for two minutes.
Take the syrup from the heat and set aside.
Wash the quince under running water and cut each into quarters. Remove the core but keep the skin on.
Slice the lemon (from which you took the zest) in half and rub it over the sliced quince to prevent it from turning brown.
Arrange the fruit in an ovenproof dish (they should sit snugly) and pour the honey-syrup over.
Place a piece of baking paper directly on the quince and then cover the dish with aluminium foil.
Bake in the oven for 3 hours.
Remove the foil and baking paper and spoon the syrup over the fruit.
Turn your oven to 180℃ and roast uncovered for 25 minutes.
Serve warm with roasted meat or with a scoop of ice-cream as dessert. Cold quince is delicious on top of cooked oats as breakfast.

Dressed-up Chicken Pie

Dressed-up Chicken Pie

6-9 chicken breasts, skin removed
1 litre chicken stock
1 onion, chopped
3 cloves of garlic, minced
15ml turmeric
15ml chicken spice
15ml salt
10ml thyme leaves
250ml greek yoghurt
1 x 400g roll puff pastry
egg wash: 1 egg yolk + 15ml water whisked together

Cut the chicken into chunks and add it to a large saucepan.
Pour in the stock and add enough additional water to cover the chicken.
Bring to a simmer and cook for one hour.
Turn off the heat and allow the chicken to cool in the liquid. (This will ensure you have juicy, tender chicken for your pie!)
When it is cool enough to handle comfortably: drain and discard the liquid and pull the chicken meat into shreds.
Preheat your oven to 200℃.
Put a saucepan over medium-high heat and add a splash of oil.
Add the onion and cook until soft.
Add the garlic and stir-fry for one minute.
Now add the turmeric, chicken spice, salt, thyme, yoghurt and shredded chicken and simmer for 20 minutes.
Spoon the mixture into a 20cm x 28cm ovenproof dish and allow to cool.
Lay the pastry flat on a work surface and cut long strips from it that is 2cm wide.
Lay two strips over the cooled chicken, forming an X. Lay another two strips 3mm to the outsides of the X-shape. Keep going until the chicken is covered in a non-weave lattice pattern.
Use a flower shaped cookie cutter to cut multiple pastry flowers and stick them onto the lattice by wetting only with water.
Brush the decorated pastry with egg wash and bake in the oven for 20 minutes, until golden.
Serve warm with a salad.

Punchy Tomato Tart

Punchy Tomato Tart

2 sheets frozen pastry
100g cream cheese (I used garlic and herb flavoured), room temperature
350g mixed tomatoes
100g blue cheese
egg-wash: one egg yolk whisked with 15ml water
a handful of basil leaves, chopped

Preheat your oven to 200℃ and line a baking sheet with baking paper.
Place one sheet of pastry on the baking sheet and trim it neatly into a square or rectangle.
Cut 1cm wide strips, the length of the other pastry and place them neatly on the outer borders so that it forms a frame.
Spread the cream cheese on the inside section of the “frame” and spread it out evenly.
Slice the tomato into thick slices and arrange a layer on the cream cheese. Season with salt and pepper.
Break up the blue cheese and arrange pieces of it all over the tomato.
Finally add another layer of tomato and drizzle over some olive oil.
Brush the outside edges of the pastry with the egg wash.
Bake in the oven for 20 minutes, until golden.
Remove the tomato tart from the oven and drizzle with some more olive oil.
Sprinkle the basil over when you are ready to serve.

Steak Sandwich

500g steak, cubed or sliced
2 onions, sliced
2 French loaves/baguette
100g butter, softened
2 cloves of garlic, minced
30ml Worcestershire sauce
125ml beef stock
250g provolone/mozzarella cheese, sliced

Preheat your oven to 190℃ and line a baking sheet with aluminium foil or baking paper.
Place a large pan on high heat and add a splash of oil.
Add the cubed steak and fry until browned and caramelised.
Spoon it into a bowl and set aside.
Turn the heat down to medium-high, add some more oil to the pan and fry the onion until just soft.
Spoon the steak back into the pan and add the Worcestershire sauce and stock to it.
Cook, stirring occasionally until the stock has evaporated and the meat and onions are moist and shiny.
Slice the baguette open and place the bottom halves on the baking sheet.
Add the butter and garlic to a bowl and mix together.
Hollow out the bread with your hands and spread the garlic butter over the halves. Set aside.
Take the steak and onions from the heat and spoon it onto the bottom halves.
Now top it with the sliced cheese and place in the oven until the cheese has melted.
Place the top halves of the baguette on top of the melted cheese and bake for another 3 minutes or so to warm it through.
Remove from the oven and slice into portions to serve.

Chicken Croutons

6 slices of regular sandwich bread
60ml vegetable oil
2 cloves of garlic, minced
100g grated parmesan cheese
45ml mayonnaise
salad leaves
350g crumbed chicken strips, cooked

Preheat your oven to 180℃ .
Slice each slice of bread into two triangles and roll each triangle flat with a rolling pin.
Pour the vegetable oil into a small bowl and add the garlic to it.
Brush one side of the bread triangle with the garlic oil.
Bring the two widest corners of the bread triangle together, overlap them slightly and secure with a wooden toothpick.
Place the shaped bread on a baking sheet and bake for about 8 minutes or until slightly golden but not hard.
Remove from the oven and set aside.
Add the parmesan cheese and mayonnaise to the leftover garlic oil and mix together.
Now scoop some of this mixture onto a salad leave (be generous!) and place a chicken strip on top.
Fold the salad leave so that it fits into the shaped bread slices and serve with drinks.


Sicilian Milk Pudding/Biancomangiare

Sicilian Milk Pudding/Biancomangiare

Yields 4 small portions.

60ml cornstarch
125ml + 375ml milk
125ml sugar
1 lemon
ground cinnamon
crushed biscuit, to serve

Add the cornstarch to a small saucepan.
Pour in the 125ml milk and whisk the mixture until there are no lumps and it is completely smooth.
Now add the sugar and whisk again.
Add the 375ml milk once you are sure there are no lumps.
Cut two or three strips of zest from the lemon and add it to the mixture.
Place the saucepan over medium heat and stir continuously for 3-4 minutes until it thickens.
Stir and cook the mixture for another 2 minutes after the first bubbles appear.
Turn off the heat and remove the lemon zest.
Wet your moulds under running water and shake out any excess water.
Pour the not milk mixture into the moulds and refrigerate for 4-6 hours.
Unmould the puddings onto serving plates.
Sprinkle a pinch of ground cinnamon on the crushed biscuit and spoon over each pudding to serve.

Breakfast Tortilla Bake

Breakfast Tortilla Bake

1 large tortilla
1 onion, sliced
1 sweet pepper, sliced
100g + 100g cheddar cheese, grated
100g baby spinach
4 eggs

Preheat your oven to 190℃.
Lay the tortilla flat in a cast iron (or any other oven-friendly)pan and press it down slightly so that it covers the bottom and comes about halfway up the sides.
Sprinkle 100g of the cheddar cheese over the bottom of the tortilla.`
Spread the sliced onion over the cheese and then scatter over the sliced sweet pepper.
Place the spinach onto and spread it out evenly to cover the rest of the ingredients.
Break the eggs on the spinach leaves and season with salt and pepper.
Sprinkle the remaining 100g cheddar over and bake in the oven for 15 minutes.
Serve the tortilla with a good, crusty bread.

Vegetable Bake

3 eggs
60ml + 60ml greek yoghurt
150ml vegetable oil
500ml flour
5ml baking powder
5ml smoked paprika
2,5ml white pepper
5ml salt
250ml grated mozzarella cheese
250ml crumbed feta cheese
250ml grated zucchini
125ml grated carrot
2 spring onions, sliced
30ml chopped parsley
45ml dried breadcrumbs
15ml sesame seeds

Preheat your oven to 180℃ and spray a ceramic dish of about 28cm x 20cm with cooking spray.
Add the eggs, 60ml yoghurt and vegetable oil to a large mixing bowl and whisk together.
Add the flour, baking powder, paprika, pepper and salt.
Add the mozzarella, feta, zucchini, carrot, spring onion and parsley and mix through to a very stiff batter.
Mix the dried breadcrumbs and sesame seeds in a small bowl.
Spoon the batter into the prepared baking dish and scatter over the breadcrumb mixture.
Bake in the oven for 35 minutes.
Serve the vegetable bake with the remaining yoghurt drizzled over.
