Spicy Chorizo Hasselback Potatoes

Spicy Chorizo Hasselback Potatoes

250g chorizo sausage, skinned and diced

8 – 10 large potatoes
50g butter
60ml olive oil
salt
15ml smoked paprika
250ml sour cream
a small bunch of chives, chopped

Preheat your oven to 200℃.
Add the diced chorizo sausage to a dry frying pan and place over medium high heat. Cook until the sausage is crispy and the fat has rendered.
Spoon into a small bowl and reserve the fat from the sausage.
Place a potato on a chopping board and now place a chopstick (or the handle of a wooden spoon) horizontally, at the top end of the potato and another on the bottom – you are boxing the potato in with two chopsticks on either side, i.e. top and bottom, so that you do not cut through when you make incisions. Cut across the potato at 3mm intervals.
Place the cut potatoes in a roasting tin.
Melt the butter and mix it with the olive oil as well as the reserved fat from the chorizo sausage. Spoon this mixture over the cut potatoes and sprinkle liberally with salt and the smoked paprika.
Put the roasting tin in the oven and cook for about 1 hour 15 minutes, testing to see whether the flesh is soft.
Add the sour cream, cooked sausage and chopped chives to a bowl and mix through.
Transfer the warm potatoes to a serving platter and spoon a dollop of the sour cream mixture on each.
Serve with the extra chorizo-sour cream dressing.

Prawn Cocktail

Prawn Cocktail

This is a classic prawn cocktail recipe and although it has been around for always it is ever popular, quick and easy to put together.

60ml butter
3 cloves of garlic, minced
400g shrimps/prawns, shells removed and cleaned
half a red onion, finely chopped
60ml mayonnaise
15ml tomato sauce/ketchup
15ml lemon juice
5ml Worcestershire sauce
iceberg lettuce
extra lemon wedges to serve

Melt the butter in a large heavy base frying pan and add the garlic and prawns. The prawn should be spaced slightly apart and not be crowded into the pan – cook more than one batch if your pan does not allow enough room for this.
Cook the prawns for about 3 minutes, stirring occasionally, until pink.
Remove from the pan and allow to cool.
Chop the red onion very finely and add it to a mixing bowl with the mayo, tomato sauce, lemon juice and Worcestershire sauce. Mix through.
Chop the prawns into chunks and add it to the sauce mixture.
Shred about 2 cups of lettuce and add that to the rest of the ingredients. Mix thoroughly.
Scoop the mixture into serving bowls/glasses/cone-shaped tuilles and serve with a wedge of lemon.

Triple Chocolate Mousse

Triple Chocolate Mousse

150g milk chocolate, chopped
45ml boiling water
7,5ml powdered gelatine
3 eggs, separated
375ml whipping cream
150g milk chocolate, chopped
150g dark chocolate, chopped

Line a 22cm x 11cm loaf tin with plastic wrap, leaving enough plastic to make an overhang (so that you can fold it on top of the mousse later on). Tip: wet the loaf tin before lining it – the water will help the plastic “stick” to the the tin.
Add the white chocolate to a heatproof bowl set over a saucepan with simmering water and allow the chocolate to melt. Remove from the heat, give it a good stir and set it aside for about 5 minutes to cool.
Add 15ml of the boiling water to a small cup and sprinkle 2,5ml of the gelatine over. Stir the mixture continuously until the gelatine has dissolved completely – about 2 minutes of constant stirring.
Add the gelatine and one egg yolk to the melted chocolate and stir to combine.
Add 125ml cream to a mixing bowl and beat with electric beaters until soft peaks form.
Add the cream to the chocolate mixture and stir through until combined.
Add one egg white to a clean mixing bowl and beat with an electric whisk until soft peaks form
Fold the egg white into the chocolate mixture with a spatula.
Pour the mixture into the prepared tin and refrigerate for 1 hour or until the white chocolate layer is set.

Repeat the process with the milk chocolate and half of the remaining ingredients.
Pour over the white chocolate mousse and place back in the refrigerator for another hour or until set.

Repeat with the dark chocolate and the remaining ingredients.
Pour over the milk chocolate layer and place in the refrigerator for a minimum of 6 hours.

Serve the mousse with a chocolate sauce or plenty of berries.

These buns have a crispy coffee flavoured topping and a buttery, feather-soft inside. They are truly delicious and easy to make! Makes 10 buns.

325g bread flour
3,5ml salt
150ml milk
45g butter
10g instant yeast
35ml sugar
1 egg

For the topping:
60g sugar
60g butter, room temperature
10ml warm water
2,5ml coffee powder
1 egg
70g flour
a pinch of salt

Cut the 50g butter into ten equal pieces, wrap in baking paper and place it in the freezer.
Line a large baking sheet with baking paper.
Add the flour and salt to the bowl of a stand mixer fitted with the dough hook.
Warm the milk until tepid and pour it into a mixing bowl.
Add the butter, instant yeast and sugar to the milk and stir until dissolved.
Turn the mixer onto a low speed and add the liquids. Mix/knead for about 3 minutes. The dough will be very sticky!
Turn the mixer to medium speed and knead for another 6 minutes. You want a dough that is soft, smooth and elastic.
Divide the dough into 10 equal pieces – weigh them on a scale, they should be around 60g each.
Roll each portion into a ball and then roll the ball into a disc with a rolling pin – about 9cm in diameter.
Take the butter cubes from the freezer and place a cube in the centre of the dough disc. Lift the sides and cover the butter with the dough, pinching it together, to seal.
Flip the ball over and place on the prepared baking sheet. Keep going until there is no dough left.
Spray some plastic wrap with cooking spray and lightly cover the buns. Set aside to proof for 90 minutes.

Coffee topping:
Add the butter and sugar to the bowl of an electric mixer fitted with the paddle attachment.
Beat until the mixture is light in colour and has a fluffy texture.
Dissolve the coffee powder in the warm water and add to the butter mixture. Stir through by hand.
Add the egg and stir until incorporated.
Add the flour and salt and stir to mix.
Spoon the mixture into a piping bag and place in the refrigerator until needed.

Preheat your oven to 180℃.
Pipe the coffee topping in a tight circular pattern, starting from the centre of the bun working a third of the way down.
Bake the buns for 20 minutes.

Smoky Croquettes

Smoky Croquettes

This is a less meaty take on traditional Dutch croquettes and makes a fabulous canapé when paired with a crisp glass of wine. The rolling/shaping of the croquettes are a bit finicky and you do have to be patient but trust me, you will be rewarded in taste!

200g mozzarella cheese
200g smoked bacon
80ml vegetable oil
1 onion, finely chopped
750ml milk
160ml flour
10ml salt
30ml chives, chopped

100ml flour
2 eggs, lightly beaten
250ml breadcrumbs
oil for deep frying

Grate the mozzarella into a mixing bowl and put aside.
Cut the bacon into chunks and add it to a saucepan with a dash of oil. Cook until done.
Spoon the bacon into the bowl with the grated mozzarella.
Place the same saucepan back onto medium heat and add the 80ml of vegetable oil and chopped onion. Simmer/fry the onion while stirring occasionally until it is soft and translucent.
In the meantime pour the milk into a jug and warm it slightly in your microwave oven.
Now add the 160ml flour to the onion and cook through for about a minute, stirring until it starts to bubble lightly.
Gradually pour in the warmed milk, stirring continuously.
Turn up the heat once all of the milk has been added. Keep stirring until the mixture comes to a boil.
Remove the mixture from the heat and add the salt, chives, bacon and mozzarella. Mix thoroughly.
Grease a large roasting tin and pour the croquette mixture into it. Cover with plastic wrap and place in the freezer until firm.

Line up three bowls: add the flour to the first; the eggs to the second and the breadcrumbs to the third bowl.
Scoop a spoonful of the mixture into your hands, roll it into a small cylinder and then proceed to roll it in the flour. Dip it in the egg and finally into the breadcrumbs to coat completely.
Place the shaped and breaded croquettes on a baking sheet lined with baking paper. Keep going in this way until all of the mixture has been utilised.
Heat some vegetable oil to 175℃ and fry a few croquettes at a time, until golden. Drain on kitchen paper and keep warm while cooking the rest.
Serve warm.
