Salmon Rillettes

1 onion, chopped
250ml dry white wine
750ml water
5ml whole black peppercorns
1 bay leaf
1 lemon, zested and juiced
250g fresh salmon, skin removed
125g smoked salmon, chopped
30ml + 30ml butter, cubed and at room temperature
30ml sour cream
45ml dill/parsley, chopped
15ml capers, finely chopped
15ml olive oil

Add half of the chopped onion, all of the white wine, water and peppercorns to a saucepan.
Add the bay leaf and lemon juice and bring the mixture to the boil.
Add the fresh salmon to the liquid, reduce the heat and simmer for 10 minutes.
Remove the salmon from the liquid and allow it to cool. You may discard the poaching liquid.
Gently flake the salmon with your fingers and add it to a bowl. Set aside to cool completely.
Add 30ml of the butter to a pan set over medium heat.
Add the remaining onion and cook until soft.
Now add the lemon zest, smoked salmon, sour cream, dill, capers, olive oil, the remaining 30ml butter and the cooked onion to the flaked salmon.
Stir the mixture together to combine evenly but be careful not to mush the salmon.
Cover the bowl with plastic wrap and refrigerate for 2 hours.
Take the salmon from the fridge and allow 30 minutes for it to come back to room temperature.
Serve on crostini or crackers.

The salmon can be kept in the refrigerator for three days. Spoon it into a glass jar, melt about 50g of butter and pour over before sealing with the lid.


Quick Gazpacho

Quick Gazpacho

half an English cucumber, cut into chunks
1 large onion, peeled and quartered
3 cloves of garlic, minced
8 ripe tomatoes, quartered
1 red chilli, chopped
30ml olive oil
80ml apple cider vinegar
a bunch of basil leaves, chopped

Add all the ingredients to a blender and blitz together.
Season with salt and pepper. Taste and adjust seasoning – it is soooo important!
Refrigerate the soup until you want to serve it.
Spoon into soup bowls and serve with ice cubes and a fresh crusty bread.

Prawn and Basil Salad

Prawn and Basil Salad

500g pasta of your choice
1 x 245g sachet pickled peppers, diced and liquid reserved
500g prawns, deveined
250ml salad cream/creamy mayonnaise
250ml yoghurt
2 big handfuls of basil leaves
half an English cucumber, diced

Cook the pasta according to packet instructions and drain.
Take the pickled peppers from the sachet and chop. Set the peppers aside.
Drizzle the pickling liquid over the warm pasta and stir through. Set aside to cool.
Bring a pot of salted water to the boil, add the prawns and cook for 4 minutes. Drain and set aside to cool.
Add the salad cream, yoghurt and basil leaves to a blender and process until you have a light green dressing.
Season the dressing with salt and pepper.
Add the pasta, prawns, cucumber, peppers and basil dressing to a large bowl and mix through.
Scatter some basil leaves on top and serve.


Classic Potato Salad

Classic Potato Salad

1kg potatoes
15ml wine vinegar
125ml sour cream
62ml mayonnaise
15ml wholegrain mustard
half an onion, very finely chopped
2 dill cucumber pickles, finely chopped
2 hard boiled eggs, peeled and chopped
62ml parsley, chopped

Cook and peel the potatoes.
Chop the potato into bite sized chunks and add it to a large mixing bowl.
Sprinkle over the wine vinegar and season with salt.
Mix the sour cream, mayonnaise and wholegrain mustard together and pour over the potato.
Add the onion, pickles, eggs and parsley and mix through.
Taste and season the salad.
