Lemon Chicken Orzo

5ml salt
2,5ml black pepper
5ml turmeric
5ml smoked paprika

8 skinless chicken breasts
30ml olive oil

1 onion, sliced
3 cloves garlic, minced
5ml Dijon mustard
125ml white wine
250ml orzo
500ml chicken stock
grated zest of one lemon
30ml lemon juice
2,5ml salt
15ml oregano, chopped
15ml parsley, chopped
190ml feta cheese, crumbed
lemon slices

Preheat your oven to 180℃ and spray a 26cm oven dish with cooking spray.
Add the salt, pepper, turmeric and smoked paprika to a small bowl and mix together.
Season the chicken with the spice mix.
Place a non-stick pan over medium-high heat, add the olive oil and then the chicken and cook until browned on both sides.
Remove the chicken and set aside.
Keep the pan on the heat but reduce the heat to medium.
Add the onion and garlic and cook for two minutes.
Add the mustard and wine and scrape up any brown bits from the pan. Reduce by half.
Pour the liquid into the prepared oven dish.
Add the orzo, chicken stock, lemon zest, lemon juice and crumbed feta and stir to mix.
Now lay the chicken pieces on the orzo and push them in slightly.
Bake in the oven for 35 minutes.
Remove and scatter over the oregano and parsley and garnish with lemon slices.
Serve warm.

Asparagus Lemon Chicken

Asparagus Lemon Chicken

4 skinless chicken breasts
80ml flour
30ml olive oil
30ml butter

Sauce:
125g butter
50ml flour
125ml chicken stock
250ml white wine
125ml lemon juice
1 bunch green asparagus, trimmed
125ml grated parmesan cheese
30ml chopped parsley
lemon wedges, to serve

Pound the chicken breasts to an even thickness.
Season the 80ml flour with salt and pepper and dredge the chicken in it.
Add the olive oil and butter to a pan set over medium-high heat and wait for it to warm up.
Fry the chicken for 2-3 minutes preside and remove from the pan.

For the sauce:
Turn the heat down to medium.
Melt the 125g butter in the same pan and sprinkle the flour over it.
Cook while stirring for one minute.
Add the chicken stock to the pan and whisk the sauce continuously.
Pour in the white wine and lemon juice and stir until blended.
Return the chicken to the pan, cover with a lid and cook for 20 minutes.
Remove the lid and add the asparagus.
Cook for another 2-3 minutes.
Take the pan from the heat, stir in the parmesan and sprinkle over the chopped parsley.
Serve the chicken with lemon wedges on the side.

Chicken-Potato Bake

Chicken-Potato Bake

1,5kg potatoes, peeled and cut into chunks
100g butter, cubed
125ml milk
15ml olive oil
30g butter
1kg chicken breasts, cut into 3cm pieces
2 onions, chopped
200g bacon, chopped
125ml dry white wine
80ml flour
190ml chicken stock
190 ml cream
250ml frozen peas

Place the potato chunks in a large saucepan, cover with water and bring to the boil. Cook until the potato is tender.
Drain and return the potato to the saucepan.
Add the 100g butter and milk to the saucepan and mash the potato until smooth.
Season the mash with salt and set aside.
Preheat your oven to 200℃.
Place a frying pan over medium-high heat and add the olive oil and 30g butter to it.
Cook the chicken chunks in batches until caramelised and brown.
Spoon the chicken into a ceramic oven dish and set aside.
Now add the onion and bacon to the same pan and cook on a medium-low heat for 10 minutes.
Turn the heat up to medium-high and deglaze the pan by pouring in the white wine while stirring with a wooden spoon. Cook for 2 minutes.
Sprinkle the flour over and while stirring for 1-2 minutes.
Add the stock a little at a time and then drizzle in the cream.
Remove from the heat and season with salt and pepper.
Add the peas, stir through and pour the mixture over the chicken.
Top the chicken with the mashed potato and bake in the oven for 30 minutes.


Chicken Lollipops

Chicken Lollipops

9 chicken drumsticks
700g potato, about 5 potatoes
45ml chives, chopped
10ml salt
15ml chicken spice
80g mozzarella cheese, grated
3 eggs
250ml breadcrumbs
sunflower oil for frying

Place the chicken in a large saucepan, cover with stock and cook until the meat falls off the bones. Separate the meat and bones but keep the bones. Set aside.
Cook the potato in salted water until soft and mash until smooth.
Add the chicken meat and potato to a mixing bowl and then add the chives, salt, chicken spice and mozzarella and mix until well blended.
Divide the mixture into 9 equal portions.
Scoop most of one portion (it is quite a big handful!) into your hand, place the end of the chicken bone into the centre with about two thirds of it sticking out, scoop up the rest of the portion of meat and potato and squeeze it together and around the bone with both hands until it sticks.
Place this shaped lollipop on a baking tray and proceed to shape the rest.
Now whisk the eggs together in a shallow bowl and place the breadcrumbs in another.
Dip each of the lollipops in the eggs and then cover with breadcrumbs. Set aside.
Warm the oil in a saucepan and fry the chicken lollipops until golden and crispy on the outside.


Tandoori Chicken

Marinade:
250ml greek yoghurt
3 cloves of garlic, minced
15ml ground ginger
15ml smoked paprika
15ml garam masala
5ml ground coriander
5ml ground cumin
5ml salt
15ml lemon juice

6 chicken breasts

Add all the ingredients for the marinade to a large mixing bowl and mix together.
Add the chicken pieces and cover them in the marinade.
Cover the bowl with plastic wrap and refrigerate for 1 hour or overnight.
Preheat your oven to 240℃ and line a baking sheet with aluminium foil.
Place a metal wire rack on the tray and arrange the chicken pieces on it.
Cook in the oven for 25 minutes until blistered.
Remove the chicken from the oven and serve with a fresh side or salad.


Cauliflower Chicken

Cauliflower Chicken

30ml vegetable oil
15ml butter
1 cauliflower head, cut into florets
200g bacon, chopped
200g baby spinach
250ml cream
15ml thyme leaves, chopped
6-8 chicken breasts
200ml grated mozzarella cheese
3 salad onions, sliced

Preheat your oven to 190℃ and spray a 28cm x 21cm ovenproof dish with cooking spray.
Place a large pan over medium-high heat and add the vegetable oil and butter to it. Wait for the butter to melt.
Add the cauliflower florets and bacon bits and stir-fry for 10 minutes.
Add the baby spinach and cook until wilted.
Turn off the heat and add the cream and thyme and mix through.
Spoon this mixture into the prepared oven dish and set aside.
Wipe the pan clean and spray with cooking spray.
Season the chicken and then brown the breasts by cooking them for about 2 minutes a side.
Arrange the chicken on top of the cauliflower mixture and then push it down slightly.
Sprinkle the cheese around the chicken and then the salad onions over everything.
Place in the oven and bake for 40 minutes, until golden.

Mushroom Chicken

4-6 chicken breasts
60ml flour
45ml + 30ml vegetable oil
30ml butter
300g mixed mushrooms
5ml thyme leaves
2 cloves of garlic, minced
15ml wholegrain mustard
15ml sour cream
125ml dry white wine
125ml chicken stock
30ml lemon juice

Place the chicken breasts between two sheets of plastic wrap and beat them so that they are an even thickness.
Pat the meat dry, season with salt and pepper and dredge them through the flour.
Add 45ml vegetable oil to a pan set over medium-high heat, add the chicken and cook until golden on both sides. Remove from the pan and set aside.
Add 30ml vegetable oil and the butter to the same pan and wait for it to heat up.
Add the mushroom and thyme leaves and fry for about 4 minutes – the mushroom should be caramelised and golden on the edges.
Turn the heat down, add the garlic and stir-fry for one minute.
Add the mustard, sour cream, white wine and chicken stock and stir to mix.
Place the chicken back in the pan, cover with a lid and simmer over a low heat for 10 minutes.
Remove the lid, drizzle the lemon juice over and serve immediately.

Simple Chicken

3 onions, chopped
2 cloves of garlic, minced
6-8 chicken breast, cut into small pieces
15ml chicken spice
15ml turmeric
10ml salt
375ml cooked rice
250ml frozen peas

Place a large pan on medium-high heat and add some oil to it.
Add the onions and fry until translucent.
Add the garlic and stir-fry for one minute.
Add the chicken pieces and sprinkle over the chicken spice, turmeric, salt and a few grindings of pepper.
Place a lid on the pan and cook for 10 minutes.
Add the rice and cook, stirring every now and then for another 10 minutes.
Add the peas and cook for 5 minutes or so until warm.
Serve a fresh tomato salad.

Chicken Croutons

Chicken Croutons

6 slices of regular sandwich bread
60ml vegetable oil
2 cloves of garlic, minced
100g grated parmesan cheese
45ml mayonnaise
salad leaves
350g crumbed chicken strips, cooked

Preheat your oven to 180℃ .
Slice each slice of bread into two triangles and roll each triangle flat with a rolling pin.
Pour the vegetable oil into a small bowl and add the garlic to it.
Brush one side of the bread triangle with the garlic oil.
Bring the two widest corners of the bread triangle together, overlap them slightly and secure with a wooden toothpick.
Place the shaped bread on a baking sheet and bake for about 8 minutes or until slightly golden but not hard.
Remove from the oven and set aside.
Add the parmesan cheese and mayonnaise to the leftover garlic oil and mix together.
Now scoop some of this mixture onto a salad leave (be generous!) and place a chicken strip on top.
Fold the salad leave so that it fits into the shaped bread slices and serve with drinks.


Creamy Parmesan Chicken

Creamy Parmesan Chicken

80ml flour
8 chicken breasts, skin and bone removed
vegetable oil
62ml butter
25ml flour
125ml white wine
62ml milk
62ml chicken stock
125ml finely grated parmesan cheese
30ml chopped parsley

Place the chicken on a work surface and dust both sides with the flour and some salt.
Place a saucepan over medium-high heat, add some vegetable oil and brown the breasts to golden brown. Work in batches and keep the browned breasts on the side.
Add the butter and wait for it to melt.
Sprinkle the flour over the butter and stir while cooking for 2-3 minutes.
Add the white wine, milk and chicken stock and stir the mixture until smooth and thickened.
Place the chicken breasts in the sauce, cover with a lid and reduce the heat to a low simmer.
Cook for 20 minutes, turning once or twice.
Remove the lid and sprinkle the parmesan over.
Stir the sauce for another 4 minutes before taking it from the heat.
Sprinkle over the parsley and serve.
