Broccoli Slices

30ml butter
1 onion, chopped
1 clove of garlic, minced
450g broccoli, finely chopped
250ml flour
10ml salt
5ml baking powder
2 eggs
250ml milk
250ml grated mozzarella cheese
125ml grated parmesan cheese

Preheat your oven to 180℃ and spray a 21cm x 28cm ovenproof dish with cooking spray. Line a large baking sheet with baking paper and set aside.
Place a saucepan on medium-high heat and add the butter.
Add the onion and cook until soft.
Add the garlic and stir-fry for one minute.
Now add the broccoli and cook for 2-3 minutes, stirring every now and then.
Take the saucepan from the heat and tip the broccoli mixture into a large mixing bowl.
Add the flour, salt, baking powder, eggs, milk and grated mozzarella and mix it through with a spatula.
Pour the mixture into the ovenproof dish and sprinkle the parmesan cheese over.
Bake in the oven for 35 minutes.
Remove the dish from the oven and place on a cooling rack for 10 minutes.
Slice the broccoli into squares and place them on the lined baking sheet.
Bake in the oven for another 15 minutes.
Remove the slices from the oven and serve warm.

Roasted Broccoli

one head of broccoli
60ml olive oil
60ml dried breadcrumbs
150ml finely grated parmesan/ementhal cheese
5ml garlic powder
2,5ml salt

Preheat your oven to 220℃ and line a baking sheet with baking paper.
Break/cut the broccoli into florets and add it to a bowl.
Drizzle over the olive oil and toss with your hands to coat the broccoli.
Sprinkle over the breadcrumbs, half the parmesan, garlic powder, salt and a few grindings of black pepper.
Mix together, rubbing slightly in order to make the flavourings stick to the broccoli.
Spread the florets in an even layer on the baking sheet, sprinkle over the rest of the parmesan and roast in the oven for 15 minutes.
Stir and flip the florets and bake another 10 minutes.
Serve immediately.

Broccoli-Cheddar Soup

Broccoli-Cheddar Soup

60ml butter
1 onion, chopped
60ml flour
750ml vegetable stock
1 head of broccoli, chopped into small pieces, stems included
1 large carrot, finely diced
500ml milk
750ml grated mature cheddar cheese

Add the butter to a large saucepan set over medium-high heat and wait for it to melt.
Add the onion and cook for 5-10 minutes until soft.
Sprinkle the flour over the onion and cook for 2-3 minutes, while stirring.
Drizzle in the stock while whisking continuously.
Season with salt and black pepper.
Now add the broccoli and carrot, bring the mixture to a boil and reduce to a low simmer.
Cook for 20 minutes, stirring every now and then.
Pour the milk into the mixture and stir to blend.
Decant about two thirds of the mixture into a blender and blitz until smooth.
Pour back into the saucepan and wait for the soup to come back to a low simmer.
Add the cheddar and stir through until melted.
Serve the soup piping hot with a crusty bread.

Roasted Broccoli

Roasted Broccoli

This is a delicious, healthy side dish that feeds six people.

1,5kg broccoli, cut into florets
100g butter, cubed
15ml lemon zest
15ml lemon juice
60ml dry white wine

15ml olive oil
15ml butter
1 clove garlic, crushed
125ml panic bread crumbs (or homemade breadcrumbs)
30ml thyme leaves
60ml cashew nuts, chopped
45ml parmesan cheese, grated

Preheat your oven to 200℃.
Place the broccoli in a large mixing bowl and pour enough boiling water over to cover it. Allow to stand for 2 minutes before draining.
Spread the broccoli in a roasting tin.
Add the 100g butter, lemon zest, juice and white wine to a small saucepan over medium heat.
Stir the mixture until the butter has melted.
Drizzle the sauce over the broccoli and season with salt and pepper. Set aside.

Add the oil and 15ml butter to a frying pan set over medium heat and allow the butter to melt.
Fry the garlic for one minute, while stirring it in the pan.
Add the breadcrumbs, thyme and cashews and stir around in the pan until golden.
Cool and mix through the parmesan.
Sprinkle the breadcrumb mixture over the broccoli and bake for 20 minutes.
Serve with fresh lemon.

Broccoli Pasta

Broccoli Pasta

This recipe is easy, quick and really big on flavour. The recipe will feed 8 hungry adults.

500g dried pasta
1 onion, chopped
2 cloves of garlic, minced
a handful of parsley
a handful of basil
2 heads of broccoli ( I know it sounds like you are about to feed an army!!!)
5ml salt
2,5ml black pepper
1 stock cube
250g cream cheese
30ml lemon juice

Cook the pasta according to the instructions on the packet.
Cut the broccoli florets from the stems and add them to the pasta during the last 2 minutes of cooking time.
Reserve 250ml of the pasta water before draining the pasta and the broccoli florets. Keep aside.
Chop the broccoli stems and add them to a large saucepan with a good dash of vegetable oil.
Turn the heat on to medium and add the onion and garlic. Cook until the onions are soft.
Add the 250ml pasta water and the stock cube and cook until the broccoli stems are soft.
Take the saucepan off the heat and pour the mixture into a liquidiser.
Add the parsley and basil and blitz. You are aiming to have a chunky, very thick sauce.
Pour this sauce back into the saucepan, add the salt and pepper and then stir the cream cheese into the mixture. Keep stirring until the cheese has melted and is incorporated into the rest of the sauce.
Add the lemon juice and stir through.
Now add the pasta and the broccoli florets. Stir the mixture so that everything is coated in the sauce.
Serve immediately.
