Biltong Paptert

1,250ml beef stock
310ml maize meal
1 onion, sliced
1 bunch leeks, sliced
3 cloves of garlic, minced
30ml thyme leaves
60ml balsamic vinegar
30ml brown sugar
a bunch spinach, destalked and chopped
200g parmesan/pecorino cheese, grated
150g sliced biltong
500ml cream

Line a 29cm x 39cm shallow baking tray (as you would use for a swiss roll) with baking paper and give it a spray with cooking spray.
Place a medium saucepan on high heat, pour in the stock and bring to a boil.
Gradually add the maize meal while whisking, until smooth.
Place a lid on the saucepan and reduce the heat to the lowest setting.
Cook for 30 minutes, stirring every now and then.
Place a large pan over medium heat and add some oil and the onion to it.
Sprinkle over 1ml salt and cook until caramelised – about 15 minutes.
Add the leeks and garlic and cook for another 5 minutes.
Add the thyme leaves, balsamic vinegar and sugar and cook another 5 minutes.
Add the spinach and stir-fry until just wilted.
Remove from the heat, season with salt and pepper and set aside.
Add half the cheese to the maize and stir through.
Pour the maize mixture into the prepared baking tin and spread it out evenly.
Spread the caramelised onion mixture, remaining cheese and biltong over the warm pap and allow it to cool for 5-10 minutes.
With the long side facing you, roll the pap into a log, using the paper to lift and roll.
Cover the log and refrigerate for 30-40 minutes.
Preheat your oven to 200℃.
Grease a 28cm ovenproof saucepan or baking tin.
Cut the log into six even pieces and place each piece cut side up in the saucepan.
Drizzle the cream over and bake in the oven for one hour.
Serve directly from the oven.


Lemon Ribs

Lemon Ribs

1.5kb lamb ribs
1 lemon, the zest grated finely
2 lemons, juiced
3 cloves of garlic, minced
15ml thyme leaves
15ml rosemary
50ml white wine
30ml olive oil
30ml honey
45ml wholegrain mustard
10ml salt

Preheat your oven to 180℃.
Cut 2 pieces of baking paper, large enough to cover an oven roasting dish. Scrunch the paper into a ball, open it up and run it under cold water. Line your roasting dish with one of the wet pieces of paper. Set aside.
Add the lemon zest, lemon juice, garlic, thyme, rosemary, wine, oil, honey, mustard and salt to a blender and blitz until smooth.
Place the ribs in the prepared dish, pour over half of the sauce and spread it evenly over the meat.
Flip the ribs over, pour the rest of the sauce over and spread it evenly.
Cover the ribs with the other piece of wet baking paper and bake in the oven for 90 minutes.
Remove the baking paper and bake for another 10 minutes or so until the ribs start to brown.
Flip them over and bake the other side until golden.
Serve immediately.

Green Peppercorn Sauce

Green Peppercorn Sauce

This peppercorn sauce can obviously be served with any meat of your choice but is really elevated when made in the same pan as the steaks.

80ml brandy
180ml beef stock
125ml cream
45ml canned green peppercorns

Cook your steak in a cast-iron pan, remove the meat but keep the pan on the heat.
Add the brandy to the hot pan.
Turn the heat to medium-high and simmer for a few minutes while scraping down the pan.
Reduce the brandy by half and until you can no longer smell the alcohol.
Pour in the beef stock, bring to a quick simmer and cook until it has also reduced by half.
Turn the heat down to medium and pour in the cream.
Add the peppercorns and cook for 2 minutes.
Taste and season the sauce with salt and a few good grindings of black pepper.
Serve as needed.

BBQ Thyme Fillet

BBQ Thyme Fillet

1 whole beef fillet
125ml thyme leaves
4 cloves of garlic
10ml onion salt or sea salt
60ml vegetable oil
30ml red wine vinegar

Blitz together the thyme, garlic, onion salt, vegetable oil and vinegar with a stick blender. You are looking for a very thick paste. Set aside.
Dry the beef fillet and tie it up.
Rub the herb paste over the fillet.
Cook on a rotisserie over medium-warm coals for 1 hour 15 minutes.
Cover the cooked fillet with aluminium foil and leave to rest for 15 minutes.
Slice into portions and serve.
